Remember the apple pizza from ‘Mannamui Gwangjang’? I had to give up on making the pizza crust with potato strings due to time constraints back then. This time, I’ve created my own style of ‘Potato String Pizza’ without apples, generously using olive oil and garlic for a flavorful, slightly spicy garlic sauce. Thinly sliced potatoes are lightly coated with potato starch to help them stick together, then topped with a rich garlic sauce and various cheeses before baking into a delightful pizza. The crispy exterior and moist interior of the potatoes, combined with the robust garlic flavor, create a unique and healthy pizza that’s enjoyable for both children and adults. This potato string pizza is not only delicious but also easy to digest and good for your health. Enjoy a special home party with this delightful pizza!

  • 1 teaspoon salt

Spicy Garlic Sauce Ingredients

  • 1/2 cup olive oil
  • 1 teaspoon minced garlic
  • 1 tablespoon dried basil
  • 1 teaspoon lemon juice
  • 2 tablespoons honey
  • 2 pinches salt
  • 2 tablespoons corn syrup

Cooking Instructions

First, prepare the potatoes, which will be the main ingredient for the pizza crust. Peel the potatoes cleanly and wash them thoroughly under running water to remove any dirt. Once washed, prepare them for cooking.

Next, thinly julienne the prepared potatoes into approximately 2-3mm thick strands. Using a mandoline slicer or a grater can help you achieve uniform thickness, which is convenient. The thinner the slices, the crispier they will bake in the oven.

Place the julienned potatoes in cold water for about 10 minutes to remove excess starch and prevent browning. Soaking in water will draw out the sticky starch, resulting in a cleaner texture.

Now, let’s make the flavorful spicy garlic sauce for the potato string pizza. In a bowl, combine olive oil, corn syrup, honey, minced garlic, lemon juice, dried basil, and salt. Mix well. If you are using store-bought garlic salt, reduce the amount of regular salt to adjust the seasoning. Garlic salt can be quite strong, so it’s best to start with a small amount and add more to taste. If using regular salt, about 1 teaspoon should be sufficient.

Drain the julienned potatoes from the cold water using a colander. Transfer them to a bowl, add potato starch and a little water (about 1/4 cup), and toss to coat evenly. Lightly coating the potato strings with starch and water will help them stick together, forming a cohesive pizza crust.

Preheat your oven to 200°C (392°F) for about 10 minutes. While the oven is preheating, line an oven pan with parchment paper. Then, spread the starch-coated potato strings in a thin, circular layer, forming the pizza crust shape. Make the edges slightly thicker than the center.

Spread the prepared spicy garlic sauce evenly over the potato string crust. Make sure to coat the strings thoroughly so the sauce seeps into every part of the pizza. This step is crucial for developing the full flavor of the pizza.
