Last time, we made a Japanese-style sake-steamed clams. This time, using the leftover clams, I’ve created a Mala Clam Stew! Surprisingly, with just a pack of mala sauce, you can make this dish incredibly easily. Enjoying the flavor of this mala clam stew with plump, large clams offers a uniquely satisfying experience. The aromatic mala scent is strong, making it perfect for mixing with rice or enjoying with a drink. This mala clam stew is truly inviting!

Ingredients
  • 500g fresh clams
  • 2 Tbsp chili oil
  • 1 pack mala sauce
  • 1 tsp minced garlic
  • 1 Tbsp chopped green onion
  • 1 Tbsp cooking wine (e.g., sake or mirin)
  • 1/2 bag bean sprouts
  • Chopped scallions for garnish
  • Sesame seeds for garnish

Cooking Instructions

Step 1

In a pot, heat the chili oil over medium-low heat. Add the minced garlic and chopped green onion, and sauté until fragrant. Be careful not to burn the garlic.

Step 2

Add all the cleaned clams to the pot. Stir-fry over high heat briefly until the clam shells start to open slightly.

Step 3

Now, for the star of the show – the mala sauce! Add the entire pack of mala sauce. Since the mala sauce is already well-seasoned, you don’t need to add extra salt or soy sauce. The flavor balance will be perfect. Feel free to adjust the amount of mala sauce to your preference.

Step 4

This dish is a ‘stew,’ not a stir-fry. To add a delightful crunch, generously add the bean sprouts. Once the bean sprouts are in, quickly cover the pot with a lid. Let it steam over medium heat for about 5-7 minutes, until the bean sprouts and clams are cooked through. The key is to steam just long enough so the bean sprouts remain crisp.

Step 5

Lift the lid to reveal your delicious Mala Clam Stew, with clams beautifully opened and a flavorful broth! Transfer the stew to a serving dish. Garnish generously with chopped scallions and a sprinkle of sesame seeds.
