Step 1
First, let’s prepare all the ingredients for our delicious jjambbong ramen. The Cheongyang pepper will add spiciness, napa cabbage provides a touch of sweetness, and chives offer a refreshing aroma. The onion brings sweetness and a crisp flavor, while the squid adds a satisfying chewiness and umami. Wash all the vegetables and squid thoroughly and chop them into bite-sized pieces. If you don’t have squid, feel free to substitute with shrimp, clams, or other favorite seafood, or simply omit it.

Now, it’s time to start stir-frying! Grab a wok or a deep pot. Add 2 tablespoons of cooking oil to the pot. Then, add 2 tablespoons of minced garlic and a generous amount of chopped green onions. Sauté over medium-low heat until fragrant. Cooking the green onions in oil creates a flavorful ‘scallion oil’ that significantly deepens the broth’s taste.

After the ramen has cooked for 1 minute, whisk 2 eggs in a separate bowl and pour them slowly into the simmering broth. The eggs will cook and add a creamy texture to the soup. Avoid stirring immediately; let the egg whites set slightly.

Once the egg starts to form soft curds, add the chopped chives. Let it come to a gentle boil one more time, then turn off the heat. Adding the chives at the end preserves their fresh aroma and vibrant color. Your delicious jjambbong ramen is now ready!
