Spicy Fish Cake Gimbap (Rolled Rice and Seaweed)

That’s why I’m sharing this fantastic ‘Spicy Fish Cake Gimbap’ recipe, perfect for making without any cooking fire. It’s quick, easy, and the delightful spicy-sweet flavor of the fish cakes combined with rice will awaken your appetite. This recipe is a great way to prepare a delicious summer treat or a simple, satisfying meal. Grab this recipe quickly before others do!
Main Ingredients- 4-5 sheets of rectangular fish cakes (eomuk)
- 3 rolls of pickled radish (danmuji)
- 15 fresh perilla leaves (kkaennip)
- 5 sheets of gimbap seaweed (gim)
Rice Seasoning- 1.5 bowls of warm cooked rice (approx. 300g)
- 1 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds
- 1/3 tsp salt
Spicy Fish Cake Seasoning- 2 stalks green onion, finely chopped
- 2-4 Cheongyang chili peppers, finely minced (adjust to your spice preference)
- 1.5 Tbsp soy sauce
- 1 Tbsp fish sauce (or anchovy sauce)
- 2 Tbsp Allulose (or corn syrup/oligo syrup)
- 1 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds
- 2.5 Tbsp gochugaru (Korean red pepper flakes)
- 1.5 bowls of warm cooked rice (approx. 300g)
- 1 Tbsp sesame oil

Cooking Instructions
Step 1
First, cut the fish cakes in half. Then, thinly julienne them into strips suitable for gimbap filling. Blanch the julienned fish cakes briefly in hot water to remove any impurities, and then squeeze out excess water. This step helps to remove any unwanted fishy smell and results in a cleaner taste.
Step 2
To the drained fish cake strips, add 1/2 Tbsp of gochugaru and gently mix with your hands. Pre-seasoning the fish cakes slightly with the chili flakes will help the main seasoning to adhere better, creating a delicious spicy fish cake filling.
Step 3
Now, let’s make the flavorful seasoning for the spicy fish cakes! In a bowl, combine the finely chopped green onions, minced Cheongyang chili peppers, 1.5 Tbsp soy sauce, 1 Tbsp fish sauce, 2 Tbsp Allulose, 1 Tbsp sesame oil, 1 Tbsp toasted sesame seeds, and 2 Tbsp gochugaru. Mix these ingredients thoroughly. Briefly microwave this mixture for about 30 seconds; this step helps the flavors meld together beautifully, creating an incredibly tasty seasoning sauce. (Note: 2 Tbsp of the total gochugaru is used here for the sauce.)
Step 4
Add the prepared seasoning sauce to the lightly seasoned fish cake strips. Mix well with your hands, gently massaging the sauce into the fish cakes. It’s important to knead and mix thoroughly so the fish cakes fully absorb the delicious spicy and sweet flavors. Your delicious spicy fish cake filling is now ready!
Step 5
The rice seasoning is crucial for great gimbap! In a bowl, combine 1.5 bowls of warm cooked rice (about 300g) with 1 Tbsp sesame oil, 1 Tbsp toasted sesame seeds, and 1/3 tsp salt. Gently mix using a spatula or spoon, being careful not to mash the rice grains. Perfectly seasoned, fluffy rice is the foundation of delicious gimbap.
Step 6
It’s time to roll the gimbap! Place a sheet of gimbap seaweed shiny-side down on a bamboo rolling mat. Spread the seasoned rice evenly over the seaweed, leaving a small border at the top. Arrange the fresh perilla leaves on top of the rice, followed by a generous layer of the spicy fish cake filling and the pickled radish strips. Carefully roll the gimbap tightly using the mat, pressing firmly as you go. Once rolled, brush the outside of the gimbap with a little sesame oil for a glossy finish and sprinkle with toasted sesame seeds for extra aroma and flavor.
