Super Easy One-Pan Spicy Beef & Octopus Quesadillas for a Quick Meal
I made a spicy and delicious beef and octopus quesadilla using domestic octopus! Even though the ingredients are simple, this recipe is perfect for a meal or a late-night snack. The chewy texture of the tortilla combined with the stir-fried octopus is incredibly delicious. I really hope you try making this! It was too good to keep to myself. ^^
Main Ingredients
- 4 Korean octopus
- 1/2 green onion stalk
- 1 onion
- Cabbage, as needed
- 4 Tbsp minced garlic
- 2 tortillas
- Shredded cheese, as needed
Spicy Seasoning
- 10 Tbsp red pepper flakes (gochugaru)
- 3 Tbsp soy sauce
- 4 Tbsp sugar
- 2 Tbsp curry powder

Cooking Instructions
Step 1
Thoroughly clean the domestic octopus by removing the beak and insides, then rinse it well under running water.
Step 2
Here’s a tip to achieve a smoky flavor at home, just like at a restaurant! In a bowl, mix 1/4 Tbsp red pepper flakes, 2 Tbsp curry powder, and 2 Tbsp cooking oil. Microwave this mixture for 3 minutes. This creates a special seasoning that imparts a delicious smoky essence.
Step 3
Without cutting the octopus, place the whole pieces into a preheated pan and lightly sear them. This step helps to develop the flavor and ensures the octopus doesn’t become too tough.
Step 4
Remove the lightly seared octopus from the pan and set aside on a plate. Reheat the same pan over medium heat. Add 1 Tbsp cooking oil and 1 Tbsp sugar. Once the sugar begins to caramelize slightly, add the chopped green onions.
Step 5
When the aroma of the green onions becomes fragrant, pour in 3 Tbsp of soy sauce. Let it sizzle briefly in the pan.
Step 6
Add the sliced vegetables and the reserved octopus back into the pan. Stir in the microwaved curry seasoning mixture, 10 Tbsp red pepper flakes, and 3 Tbsp sugar. Stir-fry everything together until well combined and the vegetables are tender-crisp.
Step 7
Finally, add the 4 Tbsp of minced garlic and stir-fry for another minute until fragrant. Be careful not to burn the garlic.
Step 8
Cut the stir-fried octopus into bite-sized pieces using scissors. This makes it easier to assemble the quesadillas.
Step 9
Place one tortilla onto a preheated pan over low heat. Let it warm up slightly until pliable.
Step 10
Spread a generous amount of the spicy octopus stir-fry onto one half of the tortilla. Sprinkle plenty of shredded cheese over the top of the filling.
Step 11
Fold the other half of the tortilla over the filling, or place a second tortilla on top. Cook over low heat until the cheese is completely melted and gooey, and the tortilla is lightly golden brown on both sides.
