Main Ingredients

  • 3 fresh eggs
  • 1/2 green onion, thinly sliced
  • 1/2 onion, thinly sliced
  • 800ml water
  • 1/2 Tbsp minced garlic
  • 1 tsp sesame oil

Seasonings & Flavorings

  • 1/2 Tbsp soybean paste (doenjang)
  • 1.5 Tbsp tuna extract (fish sauce)
  • Salt, to taste
  • 1 Tbsp chili powder (gochugaru)

Cooking Instructions

Step 1

In a bowl, crack 3 fresh eggs. Add 1 teaspoon of sesame oil and a pinch of 2-3 grains of salt. Whisk gently with a fork until well combined and smooth. Avoid over-whisking for a better texture in the soup.

Heat a pot or a pan over medium heat and add a little cooking oil. Add the thinly sliced onions and sauté until they become translucent and release their sweet aroma. Be careful not to burn them.

Add 1/2 tablespoon of soybean paste (doenjang) to the sautéed onions and stir-fry together for about 1 minute until fragrant. Then, add 1.5 tablespoons of tuna extract and 1 tablespoon of chili powder. Stir-fry quickly until well combined. Keep the heat low to prevent the seasonings from burning.

Increase the heat to high and pour in 800ml of water. Once the water comes to a rolling boil, add the sliced green onions and 1-2 chopped chili peppers (optional, for extra spice and flavor). Adding chili peppers will give the soup a more invigorating and refreshing taste.

Reduce the heat to medium-low once the soup is boiling again. Slowly drizzle the beaten eggs in a circular motion around the edge of the pot. Allow the eggs to cook gently and form delicate ribbons or curds. Resist the urge to stir vigorously, as this can make the soup cloudy.

When the eggs are almost fully cooked, taste the soup and adjust the seasoning with salt as needed. Your delicious spicy egg drop soup is now ready! Serve hot for a satisfying and refreshing start to your day, or as an excellent remedy for a hangover.
