Main Ingredients

  • 300g duck meat, prepared
  • 100g deodeok (Korean bellflower root)
  • 2 stalks scallions
  • 1/2 medium onion
  • 2 bowls cooked rice

Seasoning and Oil

  • 1/3 Tbsp coarse sea salt
  • 1/4 tsp black pepper
  • A little cooking oil for the pan
  • 1 Tbsp sesame oil (for finishing)
  • A sprinkle of sesame seeds (for garnish)

Cooking Instructions

Begin by seasoning the duck meat to remove any gamey odors. Sprinkle 1/3 Tbsp of coarse sea salt and 1/4 tsp of black pepper over the 300g of duck meat. Gently massage it in and let it marinate for a short while.

Let’s prepare the vegetables. Peel the 1/2 onion and slice it into thin strips about 0.5 cm thick. Wash the 2 stalks of scallions and cut them into 4-5 cm lengths. These will add a lovely color and fresh bite at the end.

The key is to preserve the deodeok’s unique aroma. For the 100g of deodeok, gently scrape off the skin with the back of a knife. Place it on a cutting board and lightly pound it with the back of the knife or a rolling pin until slightly flattened. Then, tear it into bite-sized pieces, about 3-4 segments each. Tearing rather than cutting helps maintain its texture.

Now, let’s make the delicious sauce. In a bowl, combine 2 Tbsp gochujang, 1.5 Tbsp gochugaru, 1 Tbsp soy sauce, 1 Tbsp minced garlic, 1 Tbsp cooking wine, 1 Tbsp sugar, and a pinch of black pepper. Stir well until the sauce is smooth. Taste and adjust the sweetness or spiciness to your preference.

Add the marinated duck meat, sliced onion, and prepared deodeok to the bowl with the sauce. Use your hands to gently mix everything, ensuring the sauce evenly coats all the ingredients. Marinate for at least 10 minutes to allow the flavors to meld beautifully.

Time to stir-fry! Heat a frying pan over medium heat and add a little cooking oil. Add the marinated duck, onion, and deodeok to the pan. Stir-fry until the duck is fully cooked and the onions become translucent. Finally, add the cut scallions and stir-fry for another minute. Be mindful of the heat to prevent burning. This completes the bulgogi.
