Pancake Ingredients- 300g bean sprouts
- 2 Tbsp pancake mix
- 1 Tbsp tempura powder
- 2 eggs
- 3 Korean green chili peppers (Cheongyang peppers)
- 1 Tbsp salted fermented shrimp (saeujeot)
- 1 Tbsp minced garlic
- Cooking oil, as needed
Cooking Instructions
Step 1
First, rinse the 300g of bean sprouts under cold water until clean. Place the rinsed bean sprouts in a large bowl and use kitchen scissors to cut them into 2-3cm pieces for easy eating. Cutting them into manageable pieces will provide a better texture when you bite into them.
Step 2
Finely chop 3 Korean green chili peppers, removing the stems first, to add a spicy kick. If you’re making these for children or prefer less spice, feel free to adjust the amount or omit the chilies.
Step 3
Add 1 tablespoon of minced garlic to help eliminate any unpleasant odors from the bean sprouts and enhance the overall flavor. You can use pre-minced garlic or mince fresh garlic yourself.
Step 4
Here’s a secret ingredient for that savory depth of flavor in your bean sprout pancakes: salted fermented shrimp! Add 1 tablespoon of saeujeot. If you don’t have saeujeot, you can substitute it with fish sauce or Korean soy sauce for soup, but saeujeot provides the richest flavor.
Step 5
Now, let’s make the batter. Add 2 tablespoons of pancake mix. The pancake mix will absorb the moisture from the bean sprouts, creating a thicker batter consistency.
Step 6
For an extra crispy texture, add 1 tablespoon of tempura powder. If you don’t have tempura powder, you can use more pancake mix instead.
Step 7
Crack 2 eggs into the bowl. The eggs will help bind the ingredients together and make the pancake tender and richer.
Step 8
Using chopsticks or a spatula, thoroughly mix all the ingredients together. Ensure that the bean sprouts are evenly coated with the batter for consistent texture and flavor.
Step 9
Heat a frying pan over medium heat and add a generous amount of cooking oil. Having enough oil is crucial to prevent the pancakes from burning and to achieve a nice golden-brown crisp.
Step 10
Using a spoon, scoop portions of the batter and place them onto the hot pan, shaping them into round pancakes. Cook over medium heat, flipping occasionally, until both sides are golden brown and crispy. If the pan seems dry, add a little more cooking oil as needed while frying to maintain crispiness.
