Finely chop 3 Korean green chili peppers, removing the stems first, to add a spicy kick. If you’re making these for children or prefer less spice, feel free to adjust the amount or omit the chilies.

Add 1 tablespoon of minced garlic to help eliminate any unpleasant odors from the bean sprouts and enhance the overall flavor. You can use pre-minced garlic or mince fresh garlic yourself.

Here’s a secret ingredient for that savory depth of flavor in your bean sprout pancakes: salted fermented shrimp! Add 1 tablespoon of saeujeot. If you don’t have saeujeot, you can substitute it with fish sauce or Korean soy sauce for soup, but saeujeot provides the richest flavor.
