Spicy Creamy Toowoomba Pasta
Outback-Inspired Shin Ramyun Toowoomba Pasta (Sung Si Kyung Recipe)
The crab meat Toowoomba pasta I had in Vietnam in 2019 was unforgettable! Recalling that exquisite taste, I’ve recreated a special Toowoomba pasta using Shin Ramyun. The perfect harmony of spiciness and creaminess creates a rich and satisfying flavor explosion in your mouth. This Toowoomba pasta, encompassing all the flavors in the world, is the ultimate dish I wish to eat again before I die.
Ingredients- 1 packet Shin Ramyun noodles
- 5 King Oyster Mushrooms
- 2 Button Mushrooms
- 2 strips Bacon (can adjust to preference)
- 150ml Milk
- 100ml Heavy Cream (or interpret “1/100 of a bottle” as 100g or 100ml)
- 1 Tbsp Gochujang (Korean chili paste)
- Pinch of Black Pepper
Cooking Instructions
Step 1
Prepare all the ingredients for your delicious Toowoomba pasta. (Note: Onion was omitted in the recipe description, but adding it will enhance the flavor.)
Step 2
Chop all the ingredients into bite-sized pieces that will complement the pasta well. Cut the bacon into manageable pieces and slice or roughly chop the mushrooms.
Step 3
In a pan, cook the bacon over medium heat until it’s golden brown and has rendered its fat. While the bacon is cooking, boil the Shin Ramyun noodles in a separate pot, cooking them for about 1 minute less than the package instructions. Rinse the noodles under cold water or toss with a little olive oil to prevent them from sticking.
Step 4
Once the bacon is partially cooked, add the (optional) onion and sauté until it becomes translucent. Season with a pinch of black pepper for added aroma.
Step 5
Add the prepared button mushrooms and king oyster mushrooms to the pan and stir-fry with the bacon and onion. Cook until the mushrooms have softened and turned slightly golden. Then, add 1 tablespoon of gochujang and stir well to combine with the ingredients. Be careful to cook over low heat to prevent the gochujang from burning.
Step 6
After stir-frying to allow the gochujang to meld with the ingredients, carefully pour in 150ml of milk and 100ml of heavy cream. Stir gently over low heat until the sauce just begins to simmer.
Step 7
Once the sauce is gently simmering, stir in a generous amount of Grana Padano cheese (or grated Parmesan cheese) to your liking until it’s fully melted. The cheese will melt into the sauce, making it richer and thicker.
Step 8
Finally, add the pre-cooked Shin Ramyun noodles to the sauce pan. Toss well to ensure the noodles are evenly coated with the sauce. Continue to cook for about 1 minute, allowing the noodles to absorb the sauce.
Step 9
Transfer the finished Toowoomba pasta to a serving bowl. Garnish with parsley flakes or a dash of hot sauce, if desired. Enjoy your delicious meal!
