I’ve tried making the ‘Tomba’ pasta using Shin Ramyun, a dish that’s been appearing on many neighbor blogs lately. It’s a surprisingly easy and delicious way to elevate your instant noodles!

Ingredients
  • 2 packs Shin Ramyun (instant noodles)
  • 500ml milk
  • 1/2 onion
  • 10 cloves garlic
  • 2 Tbsp butter
  • 4 slices cheddar cheese
  • 20 cooked cocktail shrimp
  • Pinch of black pepper

Cooking Instructions

Step 1

First, get a pot of water ready on the stove to boil for cooking the noodles. Starting with this preparation step is key!

Step 2

Thinly slice half an onion. Slice the 10 cloves of garlic thinly (into slivers or ‘pian’). Slicing garlic this way helps release its flavor when sautéed.

Step 3

Once the water is boiling, add the two packs of Shin Ramyun. Cook for about 1 minute and 30 seconds, aiming for ‘al dente’ or slightly firm noodles. Adjust the cooking time based on your personal preference; I prefer them slightly chewy.

Step 4

Drain the cooked noodles and rinse them quickly under cold water to remove excess starch. Let them drain thoroughly in a colander.

Step 5

In a pan or wok, melt 2 tablespoons of butter over medium heat. Add the sliced garlic and sauté for a minute until fragrant, being careful not to burn it.

Step 6

Add the sliced onion to the pan with the garlic and sauté until the onion becomes translucent and softened.

Step 7

Once the onions are softened, add the cocktail shrimp. Sauté for just a minute or two until the shrimp turn pink and are cooked through. Avoid overcooking to keep them tender.

Pour in 500ml of milk. Add one and a half packets of the Shin Ramyun soup base and stir well to dissolve. Using only 1.5 packets helps control the saltiness before adding cheese.

Step 9

Bring the milk mixture to a gentle simmer. Add the 4 slices of cheddar cheese and stir continuously over low heat until the cheese is completely melted, creating a rich, creamy sauce.

Step 10

Add the drained, slightly firm noodles to the creamy sauce. Toss everything together gently until the noodles are well coated.
