Cooking Instructions
Step 1
Prepare the Pork Ribs: Cut the pork ribs between the bones into individual portions. Be careful not to cut too close to the bone, as the meat may separate during cooking. Aim for bite-sized pieces.
Step 2
Soak for Blood Removal: Place the cut ribs in a bowl and soak them in cold water for about 1 hour to remove any blood. This step helps eliminate any gamey odor and tenderizes the meat.
Step 3
Boil the Ribs: In a pot, bring water to a boil along with 1 Tbsp Doenjang, 2 Tbsp minced garlic, a generous amount of black pepper, and half an onion (quartered). Add the soaked ribs to the boiling water and simmer for about 30 minutes over medium-low heat. This process makes the ribs tender and removes any impurities.
Step 4
Create the Cream Sauce Base: In a large bowl, whisk together 3 cups of milk, 1 egg yolk, and 2 Tbsp of Parmesan cheese powder until smooth and well combined. This mixture forms the foundation of your creamy sauce.
Step 5
Cook the Pasta: Bring a pot of generously salted water to a boil. Add 1 Tbsp of olive oil and the pasta for 1 serving. Cook according to package directions until al dente. Drain the pasta, reserving some pasta water, but do not rinse it with cold water. The starch on the pasta will help the sauce cling better.
Step 6
Sauté Aromatics and Combine Sauce: Melt a knob of butter in a heated pan over medium heat. Add half an onion (thinly sliced) and 1 Tbsp minced garlic. Sauté until the onion becomes translucent. Then, add 1 sliced mushroom and cook for another minute. Pour in the prepared milk mixture and reduce heat to low, stirring gently.
Step 7
Add Fire Chicken Sauce: Once the milk mixture begins to gently simmer, stir in the fire chicken sauce. The amount of sauce can be adjusted based on your spice preference. (Tip: Start with 3 Tbsp and taste before adding more). Continue to stir over low heat until the sauce thickens slightly.
Step 8
Achieve Creaminess: For an even richer and thicker sauce, add 1 slice of cheddar cheese and stir until it melts completely into the sauce. This adds both flavor and a luxurious texture.
Step 9
Incorporate Ribs: Add the pre-boiled pork ribs to the sauce. Let them simmer for about 2-3 minutes, allowing the ribs to absorb the delicious flavors of the sauce.
Step 10
Combine Pasta and Sauce: Finally, add the drained pasta to the pan with the sauce and ribs. Toss everything together gently until the pasta is well coated. Let it cook for another 1-2 minutes for the pasta to absorb more flavor.
Step 11
Plate and Garnish: Transfer the Fire Chicken Rib Pasta to a beautiful serving plate. Garnish with extra Parmesan cheese powder, parsley flakes, and finely chopped Serrano peppers for an extra pop of color, spice, and aroma. Enjoy your delicious creation!
