Spicy Chopped Chili Side Dish

There are many chopped chili recipes, but I love this method I learned from a friend because it’s so simple and delicious. It’s the perfect quick side dish!

Chopped Chili Ingredients

  • 300g chilies (choose your preferred type, like Cheongyang or Korean green peppers)
  • 3 Tbsp minced garlic
  • 12 Tbsp fish sauce (anchovy or sand lance fish sauce are both fine)

Cooking Instructions

Step 1

Place the washed chilies in a steamer and steam for about 5 minutes once the steam is active. This prevents excess moisture from the chilies and skips the stir-frying step, making it super easy.

Be careful not to over-steam the chilies; they should remain vibrantly green and slightly firm. Steaming them just enough to soften them slightly is ideal. (Tip: Slightly reducing the steaming time will result in a crisper texture.)

Transfer the steamed chilies to a Vitamix (or food processor). Process them to your desired consistency, adjusting the speed to levels 4-5. You can chop them finely or leave them slightly chunky for texture. (Tip: This saves you the effort of chopping everything by hand!)

Add 3 Tbsp of minced garlic and 12 Tbsp of fish sauce to the chopped chilies. Mix well to combine everything. Adjust the amount of garlic and fish sauce to your taste.

Your super simple chopped chili side dish is ready! It’s delicious served with rice or as a component in bibimbap. Making a larger batch will provide you with a convenient banchan for a while.
