What shall we make today? Let’s tackle those leftover ingredients in the fridge with a ‘fridge raid’ recipe! I made a delightful chili shrimp stir-fry using those bits and pieces of ingredients I had lying around. It’s a fantastic way to use up small amounts of produce and create a flavorful meal.
Main Ingredients- Cocktail shrimp (thawed) 1 bag
- King oyster mushroom 1
- Bell pepper 1/2 (using different colors makes it visually appealing!)
- Carrot 1/4
- Onion 1/2
Cooking Instructions
Step 1
First, prepare the cocktail shrimp. If frozen, thaw them. In a bowl, combine the thawed shrimp with 1 tablespoon of cooking wine. Gently toss to coat. The cooking wine helps to remove any fishy odor and adds a subtle flavor. Season with a pinch of salt and black pepper. Let it marinate for about 10 minutes; this will help the flavors penetrate the shrimp.
Step 2
Now, let’s prepare the vegetables. Wash the king oyster mushroom, bell pepper, carrot, and onion. Pat them dry. Chop them into pieces roughly the same size as the shrimp (about 1-2 cm). Cutting the vegetables uniformly ensures they cook evenly and makes the dish look neater. For the bell pepper, remove the seeds before chopping.
Step 3
Heat 2 tablespoons of cooking oil in a pan over medium-high heat. Add all the chopped vegetables. Stir-frying quickly over high heat helps to maintain the crispness of the vegetables. Once the vegetables begin to look slightly translucent, sprinkle a tiny pinch of salt over them for extra seasoning. The key here is to stir-fry briskly to prevent the vegetables from releasing too much moisture.
Step 4
When the vegetables are partially cooked, add the marinated shrimp and the chili sauce to the pan. Stir-fry everything together. Shrimp cook very quickly, so avoid overcooking them, which can make them tough. Continue to stir-fry for just another 1-2 minutes, allowing the chili sauce to coat all the ingredients evenly. The sauce should thicken slightly as it coats everything beautifully.
