Spicy & Chewy Stir-fried Squid (Ojingeo Bokkeum)

Today, we’re making Ojingeo Bokkeum, a delightful spicy and chewy squid dish 🙂
Ingredients- 2 squid, cleaned
- 1 small onion
- 1/2 green onion (scallion)
- 60g cabbage
- 35g carrot
- 2 Korean chili peppers (cheongyang)
- 1 red chili pepper
- 2 Tbsp sesame oil
- Sesame seeds, for garnish
Seasoning Sauce- 1 Tbsp gochujang (Korean chili paste)
- 4 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp minced garlic
- 4 Tbsp soy sauce
- 2 Tbsp sugar
- 1 Tbsp mirin (rice wine)
- 1 Tbsp oligodang (corn syrup) or to taste
- Pinch of black pepper
- 1 Tbsp gochujang (Korean chili paste)
- 4 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp minced garlic
- 4 Tbsp soy sauce
- 2 Tbsp sugar
- 1 Tbsp mirin (rice wine)
- 1 Tbsp oligodang (corn syrup) or to taste
- Pinch of black pepper
Cooking Instructions
Step 1
Let’s start by preparing the vegetables. Slice the onion into moderate-sized strips. Cut the green onion diagonally.
Step 2
Cut the cabbage and carrot into large, bite-sized pieces.
Step 3
Slice the Korean chili peppers and red chili pepper diagonally.
Step 4
Cut the cleaned squid (with innards and skin removed) into bite-sized pieces. Tip: Squid shrinks when cooked, so don’t cut it too small to maintain a good chewy texture.
Step 5
Now, let’s make the perfect seasoning sauce for Ojingeo Bokkeum! In a bowl, combine 1 Tbsp gochujang, 4 Tbsp gochugaru, 1 Tbsp minced garlic, 4 Tbsp soy sauce, 2 Tbsp sugar, 1 Tbsp mirin, 1 Tbsp oligodang (or more, depending on your sweetness preference), and a pinch of black pepper. Mix everything well until thoroughly combined. Tip: If you prefer a slightly sweeter taste, feel free to add a little more oligodang.
Step 6
Heat a pan over high heat and add a little cooking oil. Start by stir-frying the green onions until fragrant. Once the aroma of the green onions is released, add the squid and stir-fry briefly. Then, add the cabbage, onion, and carrot. Cook until the vegetables are slightly softened.
Step 7
Add the prepared seasoning sauce and mix well with the squid and vegetables. Tip: To prevent the squid from becoming tough, stir-fry quickly. Don’t overcook it!
Step 8
Finally, add the sliced Korean and red chili peppers and toss briefly. Turn off the heat, then stir in 2 Tbsp of sesame oil and a sprinkle of sesame seeds (or crushed sesame seeds) to finish. This adds a wonderful aroma and shine.
