Taking inspiration from Yeoro House’s stir-fried squid, which is more of a seasoned dish than a stir-fry, this recipe adds plenty of bean sprouts for a richer, more flavorful steamed version. Perfect for when you’ve had too much greasy food or need a mood boost, this spicy squid dish is not only a rice thief but also a complete happiness booster!

Main Ingredients

  • 2 Squid (cleaned)
  • 2 Green Onions (green parts only)
  • 2 King Oyster Mushrooms
  • 1/2 Onion
  • 1 bag Steaming Bean Sprouts (approx. 200g)

Seasoning Ingredients

  • 1/3 cup Gochugaru (Korean chili flakes, approx. 50g)
  • 2 Tbsp Minced Garlic
  • 1 tsp Minced Ginger
  • 3 Tbsp Soy Sauce or Fish Sauce
  • 1 tsp Saeujeot (fermented shrimp paste, finely minced)
  • 2 Tbsp Maesil Cheong (Korean plum syrup)
  • 4 Tbsp Natural Seasoning or Dashi Broth
  • 1 Tbsp Gochujang (Korean chili paste – to be added just before cooking)
  • 1 Tbsp Sugar
  • 1 pinch Black Pepper

Cooking Instructions

Step 1

Prepare fresh whole squid, ensuring all innards are thoroughly removed. For steamed squid, maintaining the round shape of the squid body makes it more appealing. Rinse the squid inside and out under cold running water.

Prepare the vegetables for the squid. Instead of radish, julienne the king oyster mushrooms to add texture. Cut the green parts of the green onions into lengths similar to the mushrooms. Slice the onion thinly as well.

To prevent the squid from releasing too much water and becoming tough when stir-fried, briefly blanch it in boiling water with a little salt for about 1 minute. Once blanched, cut the squid body into rings and separate the tentacles into pairs.

For a deeper flavor, mix all seasoning ingredients (except gochujang) and let them marinate in the refrigerator for about a day. If making it immediately, mixing the seasoning ingredients beforehand is recommended. (Tip: Minced ginger is excellent for removing any fishy smell, so be sure to include it!)

Heat a pan and lightly sauté the prepared vegetables (king oyster mushrooms, onion) to release their aroma. (This step can be skipped.)

Add the blanched and sliced squid to the pan, then pour in the pre-made seasoning sauce. The sauce already includes gochugaru, minced garlic, minced ginger, fish sauce, saeujeot, broth, and maesil cheong, so there’s no need to add extra garlic.

Now, just before cooking, add 1 tablespoon of gochujang to enhance the spicy flavor.

Add 1 tablespoon of sugar to soften the spiciness and add umami, along with a pinch of black pepper for extra aroma.

Stir-fry all ingredients quickly over high heat. Since the squid is already blanched, it only needs about 1-2 minutes of quick stir-frying to maintain its tender texture.

Finally, add the bean sprouts and toss gently until they are just wilted. The sprouts should remain slightly crisp for the best texture.

The seasoning from the sauce should be sufficient, but if it tastes bland, add more seasoning sauce or adjust with soy sauce. If the color is too light, you can add more gochugaru. If it’s too spicy, add a little more sugar to adjust the heat level.
