Spicy Cheongyang Pepper and Tuna Can Stir-Fry: A Flavorful Side Dish

With more time spent at home these days, preparing three meals a day can be a challenge. Today, I’m sharing an easy-to-make side dish using Cheongyang peppers and tuna cans to simplify your meals. A spoonful of this stir-fry mixed with warm rice makes for a satisfying meal. While Cheongyang peppers are not in season, they are not overly spicy right now, offering a pleasant mild heat that makes you crave more.
Main Ingredients- 300g Cheongyang peppers
- 1/2 onion
- 1/2 green onion stalk
- 135g canned tuna
- 6 cloves garlic
- 2 Tbsp cooking oil
Seasoning- 2 Tbsp soy sauce
- 1 Tbsp cooking wine (e.g., Mirin)
- 2 Tbsp plum extract (Maesil Cheong)
- 1 tsp tuna extract or fish sauce
- 1 Tbsp oligosaccharide (or corn syrup)

Cooking Instructions
Step 1
First, prepare the vegetables. Finely dice the onion and thinly slice the green onion.
Step 2
Wash the Cheongyang peppers thoroughly under running water. Remove the stems and make a cross-shaped incision (an ‘X’) on each pepper. Making these cuts helps the seasoning penetrate better and reduces splashing while cooking.
Step 3
After making the cuts, gently shake out the seeds from the Cheongyang peppers and then finely mince them. If you prefer it spicier, you can leave the seeds in.
Step 4
Lightly crush the garlic cloves with the side of a knife or mince them finely. This will help release a rich garlic aroma.
Step 5
Heat 2 tablespoons of cooking oil in a pan over low heat. Add the minced garlic and sauté slowly until it turns a light golden brown and becomes fragrant. Be careful not to burn the garlic.
Step 6
Once the garlic is fragrant, add the diced onion and sliced green onion. Stir-fry over medium heat for about 2-3 minutes until the vegetables become translucent.
Step 7
Now, add the minced Cheongyang peppers and stir-fry until they wilt slightly. Cook just enough to soften the peppers and release their spicy aroma; avoid overcooking.
Step 8
When the Cheongyang peppers are slightly cooked, add all the prepared seasoning ingredients (soy sauce, cooking wine, plum extract, tuna extract, and oligosaccharide). Stir well to combine and cook until the sauce thickens and coats the ingredients.
Step 9
Drain the oil from the canned tuna and add it to the pan. Stir gently to mix with the seasoning and ingredients, cooking for another minute until heated through. Avoid breaking up the tuna too much. Stir-frying briefly after adding the tuna enhances the flavor.
Step 10
Transfer the delicious Cheongyang pepper and tuna stir-fry to a serving dish. Enjoy it with a bowl of warm rice!
