Main Ingredients
- 1 pack Enoki mushrooms (approx. 100-150g)
- 2 large Eggs
- 1 Cheongyang pepper
- 1 Red chili pepper
- 1/3 stalk Green onion
Cooking Instructions
Step 1
First, let’s begin by preparing all the ingredients that will add wonderful flavor to our enoki mushroom pancake.
Step 2
Crack 2 large eggs into a medium-sized bowl. Add 1/3 teaspoon of salt and whisk gently with a fork or whisk until well combined. This egg mixture will serve as the base for our pancake and the salt helps to enhance the flavor.
Step 3
Trim off the bottom 1cm of the enoki mushrooms. Gently separate the mushroom strands and cut them into approximately 1cm lengths. Cutting them to this size makes them easier to manage in the pancake.
Step 4
Add the chopped enoki mushrooms to the bowl with the seasoned egg mixture. Gently toss them to ensure the mushrooms are evenly coated with the egg.
Step 5
Finely mince 1 Cheongyang pepper (for spiciness) and 1 red chili pepper (for color). Removing the seeds before mincing is recommended if you prefer less heat. Finely chopped chilies will distribute their flavor beautifully throughout the pancake.
Step 6
Finely slice the green onion. You can use both white and green parts. The mild aroma of the green onion will add another layer of deliciousness to the pancake.
Step 7
Add the minced Cheongyang pepper, red chili pepper, and sliced green onion to the bowl containing the enoki mushrooms and egg mixture. Gather all these flavorful additions together.
Step 8
Gently mix all the ingredients together using a spatula or spoon until everything is well combined. Ensure the enoki mushrooms, vegetables, and egg mixture are evenly distributed to create a cohesive batter.
Step 9
Once all the ingredients are thoroughly mixed, your delicious enoki mushroom pancake batter is ready! This simple step completes the batter preparation.
Step 10
Heat a frying pan over medium-low heat and add a generous amount of cooking oil. It’s important not to overheat the oil, as this can cause the pancake to burn before it’s cooked through. Medium-low heat allows for even cooking.
Step 11
Ladle portions of the batter into the heated pan, spreading them out thinly and evenly with the back of a spoon. Making the pancakes thin is key to ensuring they cook through properly.
Step 12
Cook over medium-low heat until the underside is golden brown and set. Carefully flip the pancake using a spatula and cook the other side until it’s also golden brown and cooked through. Your delicious enoki mushroom pancake is now ready to be enjoyed!
