Main Ingredients

  • 220g anchovies for broth (guts removed)
  • 10 Cheongyang peppers (seeds removed, thinly sliced diagonally)

Seasoning Ingredients

  • 2 Tbsp soy sauce
  • 1 Tbsp minced garlic
  • A pinch of toasted sesame seeds
  • 1 tsp brown sugar
  • Generous amount of cooking oil (or sunflower oil)

Cooking Instructions

Step 1

First, it’s best to use small anchovies or those meant for broth. Remove the guts, which can cause a bitter taste, and thinly slice the Cheongyang peppers diagonally. Place the prepared anchovies in a wide pan, and add the sliced Cheongyang peppers. Pour 2 tablespoons of soy sauce along the edge of the pan. Stir-fry quickly over low heat for about 2-3 minutes until the soy sauce is evenly absorbed by the anchovies and peppers. Be careful not to burn them.

Add a generous amount of cooking oil to remove any fishy smell from the anchovies and make them crispy. Increase the heat slightly to medium and stir-fry the anchovies and peppers until they are nicely browned and develop a crispy texture. Continue stirring and frying for about 3-4 minutes, until the anchovies are cooked to your liking.

Once the anchovies are sufficiently fried, add 1 tablespoon of minced garlic and 1 teaspoon of brown sugar. Brown sugar adds a subtle sweetness and depth of flavor compared to white sugar. Finally, sprinkle in some toasted sesame seeds for added nutty aroma.

Stir everything together over high heat for about 1 more minute to combine all the flavors. It’s important to keep stirring to prevent the anchovies from burning. Your delicious Spicy Cheongyang Pepper Anchovy Stir-fry is ready! Serve it over warm rice for a delightful meal. Store any leftovers in an airtight container in the refrigerator; it will keep for several days.
