Spring Cabbage Pancake Recipe with Spicy Peppers: A Simple Snack or Late-Night Meal!
Learn how to make a delicious spring cabbage pancake featuring the unique sweetness of spring cabbage and the zesty kick of cheongnyang peppers. This pancake is crispy on the outside and tender on the inside, making it a perfect accompaniment to drinks or a satisfying late-night snack.
Ingredients- 10 Spring cabbage leaves (washed thoroughly)
- 0.5 cup Pancake mix (buchim garu)
- 0.5 cup Water
- 2 Cheongnyang peppers (seeds removed and finely chopped)
- Cooking oil (generous amount)
Cooking Instructions
Step 1
First, gently separate each leaf of the fresh spring cabbage. Wash them thoroughly under running water multiple times to remove any dirt or debris. It’s important to wash them meticulously.
Step 2
In a bowl, combine 0.5 cup of pancake mix with 0.5 cup of water. Whisk until smooth and lump-free to create the batter. The ideal consistency should not be too thick or too thin; aim for a slightly thicker consistency than pancake batter.
Step 3
Thinly slice the washed and drained spring cabbage into long, bite-sized strips. Slicing them too thinly might cause them to break apart easily, so aim for a moderate thickness.
Step 4
Add the sliced spring cabbage to the prepared batter and gently mix until each strip is evenly coated with the batter. Be careful not to overmix, as this can make the cabbage fall apart.
Step 5
Now, it’s time to add the spicy kick. Finely chop the 2 cheongnyang peppers (after removing the seeds) and mix them into the batter along with the spring cabbage. Feel free to adjust the amount of peppers to your preference for spiciness.
Step 6
Heat a generous amount of cooking oil in a pan over medium heat. Ladle portions of the batter onto the pan and spread them out thinly. Cooking over medium heat, rather than low heat, will ensure the pancakes cook through evenly, becoming crispy on the outside and moist on the inside without burning. Once one side is golden brown, flip and cook the other side similarly.
Step 7
Once both sides are beautifully golden brown and crispy, transfer the pancakes to a serving plate. Enjoy this delicious spring cabbage pancake, a delightful combination of the spicy heat from the cheongnyang peppers and the savory flavor of the spring cabbage! It’s best enjoyed warm.
