  • 1/7 green onion, finely chopped
  • 1.3 Korean chili peppers (like Cheongyang), seeds removed and finely minced
  • 2 slices of processed cheese

First, thoroughly wash the Korean chili peppers and green onions, pat them dry, and then mince them as finely as possible. If you prefer a spicier taste, feel free to adjust the amount of chili peppers.

In a large bowl, crack the 4 fresh eggs. Add a pinch of salt. Use a whisk to beat the eggs until the whites are completely broken down and the mixture is smooth. Stir in the finely chopped green onions and minced chili peppers until well combined.

Pre-cut the slices of cheese into 2-4 pieces each, depending on the desired size of your omelet rolls. This makes it easier to roll them up evenly.

Heat a non-stick frying pan over medium-low heat. Add enough cooking oil to coat the bottom. Pour about one-third of the egg mixture into the pan. Tilt and swirl the pan to spread the egg mixture into a thin, wide layer.

Cook the egg over low heat, being careful not to let it stick to the pan. It’s best to proceed to the next step when the surface is still slightly moist.

Gently fold about one-third of the cooked egg over itself and slide it to one side of the pan. Pour another portion of the remaining egg mixture into the pan, allowing it to flow underneath the folded egg. Spread out the chopped vegetables evenly over the new layer of egg. Once the egg is mostly cooked, place the pre-cut cheese slices over the omelet. The melting cheese will add a wonderful creaminess.

You can gently press the top with a spatula to ensure it’s firm and holds its shape as it cools from residual heat.
