Key Ingredients- Leftover boneless chicken, cut into bite-sized pieces (approx. 1 cup)
- Cooked rice, 1 serving
- Finely chopped kimchi, 2 Tbsp
- Buldak sauce, 2 Tbsp
- Shredded pizza cheese, 2 Tbsp
- Dried parsley flakes, for garnish (optional)
Cooking Instructions
Step 1
Start by heating a lightly oiled pan over medium heat. Add the finely chopped kimchi and sauté for about 2-3 minutes until it becomes softened and fragrant.
Step 2
Once the kimchi is nicely sautéed, stir in the Buldak sauce. Cook for another minute, mixing well with the kimchi until the spicy aroma is released.
Step 3
Now, add the bite-sized pieces of leftover boneless chicken to the pan with the sautéed kimchi and sauce. Stir-fry for 1-2 minutes until the chicken is well coated with the sauce.
Step 4
With the chicken cooked, add the cooked rice (1 serving) to the pan. Gently stir and mix everything together with a spatula or spoon until the rice is evenly coated with the chicken and sauce mixture. Make sure to combine thoroughly for the best flavor.
Step 5
Your delicious stir-fried rice with chicken and sauce is now ready! It’s great as is, but let’s make it even more special.
Step 6
Transfer the stir-fried rice to a serving bowl. Generously top with shredded pizza cheese (2 Tbsp) and sprinkle with dried parsley flakes for a beautiful garnish and added flavor, if desired.
Step 7
Finally, microwave the bowl for about 2 minutes, or until the cheese is completely melted and bubbly. Once the cheese is wonderfully gooey, your Spicy Cheese Rice Bowl is ready to be enjoyed!
