  • 1 kg LA Galbi (Korean short ribs)
  • 1/2 medium onion
  • 2 slices canned pineapple
  • 2 Tbsp minced garlic
  • 1/2 stalk green onion
  • 1/2 Tbsp salt
  • Appropriate amount of tteokbokki rice cakes

Cooking Instructions

Step 1

Begin by preparing all your ingredients. For the LA Galbi, it’s essential to soak them in cold water to remove excess blood, ensuring a clean and delicious flavor without any gamey taste.

To effectively remove the blood from the LA Galbi, dissolve 2 tablespoons of sugar in cold water and soak the ribs for about 1 hour. The sugar helps tenderize the meat, making it exceptionally soft.

Once the ribs have been soaked, blanch them briefly in boiling water. LA Galbi has thin cuts of meat, so overcooking will cause them to lose their juices and flavor. Just a quick blanch to remove the pinkish color from the surface is sufficient.

Immediately rinse the blanched ribs under cold water to clean off any impurities. Trim away any visible fat, membranes, or sinew, and then cut the ribs into bite-sized pieces.

Roughly chop the 1/2 onion and 2 slices of canned pineapple. Place them in a blender along with about 2-3 tablespoons of the pineapple syrup from the can. Blending these ingredients will enhance the sauce’s flavor and further tenderize the meat.

Strain the blended mixture through a fine-mesh sieve or cheesecloth to obtain a smooth liquid. This step is recommended for a clear, refined sauce, but you can skip it if you prefer a more rustic texture.

In a bowl, combine the strained onion and pineapple liquid with all the sauce ingredients: 8 Tbsp soy sauce, 5 Tbsp gochugaru, 1 Tbsp sugar, 3 Tbsp maesilcheong, 3 Tbsp cooking wine, 1 Tbsp oligosaccharide, 2 Tbsp minced garlic, and 1/2 Tbsp salt. Finely mince 3 Cheongyang chili peppers and 1 red chili pepper and add them to the sauce for a spicy kick.

Place the prepared LA Galbi in a pot and pour the sauce over it, mixing well to ensure each piece is coated. Add 100 ml of water to prevent sticking. Bring to a boil over medium-high heat, then immediately reduce the heat to low, cover, and simmer until the ribs are tender and cooked through.

Once the ribs are tender, finely chop the green onion and add it to the pot. Finally, stir in 2 Tbsp of sesame oil, a pinch of black pepper, and a pinch of sesame seeds for added aroma.

If you forgot to add the chili peppers to the sauce earlier, you can simply slice and add them now according to your preference. (Tip: Adding them to the sauce earlier allows their spicy flavor to infuse more deeply.)

Transfer the cooked ribs to a skillet or a shallow pot. Add tteokbokki rice cakes in between the ribs for an extra delightful touch. Generously sprinkle shredded mozzarella cheese over the top and garnish with the sliced red and green chili peppers.
