  • 1/4 head well-fermented ripe kimchi (approx. 200g)
  • 1 ladleful of kimchi brine (approx. 100ml)
  • 1 can of mackerel (approx. 150g)
  • 1/2 stalk green onion (approx. 50g)

Broth Ingredients

  • 900ml water or rice water

Cooking Instructions

Step 1

First, prepare your ripe kimchi. Chop it into bite-sized pieces (about 2-3 cm) and place them in a pot. Add all the liquid from the canned mackerel to enhance the umami flavor, making it even more delicious.

Next, pour 900ml of water into the pot. Using anchovy-kelp broth or rice water will add more depth of flavor, but plain water works perfectly well too.

Now, place the pot over high heat and bring it to a boil. Once the kimchi is softened and the broth is bubbling vigorously, reduce the heat to medium-low and simmer for another 5-7 minutes to allow the kimchi flavor to fully infuse into the broth.

Once the kimchi is adequately cooked, slice the green onion diagonally and add it to the pot. Simmer for a little longer after adding the green onion, and your delicious canned mackerel kimchi stew will be complete. Feel free to add minced garlic or chili peppers according to your preference.
