Recipe Info

  • Category : Fusion
  • Ingredient Category : Pork
  • Occasion : Everyday
  • Cooking : Grilled / Roasted
  • Servings : 3 servings
  • Difficulty : Beginner

Key Ingredients

  • Marinated Bulgogi (for 2 servings, store-bought is fine)
  • 2 Bell Peppers
  • 3-4 Tortillas
  • 3 Tbsp Tomato Sauce
  • 1/4 head Kimchi (finely chopped)

Cooking Instructions

Step 1

Prepare all the ingredients for your delicious Kimchi Bulgogi Quesadillas. Using pre-marinated bulgogi from the supermarket makes this recipe even more convenient.

Step 1

Step 2

Finely dice the bell peppers for added color and crunch. Wash them thoroughly, remove the seeds, and chop them into small, uniform pieces. Set aside.

Step 2

Step 3

Heat a pan over medium heat and add the marinated bulgogi. Stir-fry the bulgogi, ensuring it mixes well with its marinade, until cooked through.

Step 3

Step 4

It’s crucial to cook the bulgogi until the marinade is significantly reduced and almost dried out. Be careful not to burn the marinade by adjusting the heat as needed.

Step 4

Step 5

Check the consistency of the cooked bulgogi. The marinade should be well-reduced and coating the meat evenly, as shown in the picture, for the best flavor in your quesadillas.

Step 5

Step 6

Add the finely chopped kimchi to the pan with the bulgogi. This step introduces a spicy kick and a delightful crunch. Adjust the amount of kimchi according to your preference.

Step 6

Step 7

Sauté the kimchi with the bulgogi until it’s fragrant. Then, add the diced bell peppers and stir-fry them until they are slightly softened but still retain some crispness. (My apologies for the slightly out-of-focus photo at this stage!)

Step 7

Step 8

Gently warm the tortillas over low heat on both sides. Avoid using high heat, as this can make the tortillas tough or burnt.

Step 8

Step 9

Spread a thin layer of tomato sauce over half of one side of each warmed tortilla. Using too much sauce might make the quesadilla overly tangy, so use it sparingly.

Step 9

Step 10

Generously spoon the cooked Kimchi Bulgogi mixture onto the half of the tortilla with the tomato sauce. If you have cheese like mozzarella or cheddar, feel free to add it here for an extra creamy and flavorful quesadilla.

Step 10

Step 11

Carefully fold the tortilla in half to create the quesadilla shape, enclosing the delicious filling. Your amazing snack is almost ready to be enjoyed!
