Spicy Budae-Bokkeum (Korean Army Stew Stir-fry)

Essential Ingredients- 2 Frankfurt sausages
- 1/2 onion
- 3 cabbage leaves
- 1 can Spam or similar canned ham
- 2 slices bacon
- 3 leaves aged kimchi
- 2 Tbsp cooking oil
- 1 serving cooked ramen noodles
- 1 handful scallion greens (julienned)
Seasoning Ingredients- 2 Tbsp sugar
- 2 Tbsp gochugaru (Korean chili flakes)
- 2 Tbsp soy sauce
- 1 Tbsp gochujang (Korean chili paste)
- 1 Tbsp minced garlic
- Pinch of black pepper
- 1 cup beef or bone broth (200ml)
- 2 Tbsp sugar
- 2 Tbsp gochugaru (Korean chili flakes)
- 2 Tbsp soy sauce
- 1 Tbsp gochujang (Korean chili paste)
- 1 Tbsp minced garlic
- Pinch of black pepper
- 1 cup beef or bone broth (200ml)
Cooking Instructions
Step 1
First, let’s prepare the ingredients. Slice the frankfurter sausages diagonally about 1cm thick. Dice the onion and canned ham into bite-sized pieces (about 2cm). Chop the cabbage into large pieces and the aged kimchi (lightly squeezed to remove excess juice) into bite-sized pieces (about 2-3cm). Cut the bacon into 2-3cm lengths.
Step 2
Now, let’s make the delicious sauce for the Budae-Bokkeum! In a bowl, combine 2 Tbsp sugar, 2 Tbsp gochugaru, 2 Tbsp soy sauce, 1 Tbsp gochujang, 1 Tbsp minced garlic, and a pinch of black pepper. Mix well. Add 1 cup of beef or bone broth to the seasoning ingredients and stir everything together thoroughly. This broth will add a deep flavor to the dish.
Step 3
Get a wide pan or a wok ready. Add 2 Tbsp of cooking oil to the pan. Arrange the prepared sausages, onion, cabbage, ham, bacon, and kimchi nicely in the pan. Once the ingredients are in place, pour the prepared seasoning mixture evenly over them.
Step 4
It’s time to stir-fry! Cover the pan with the ingredients and sauce and bring it to a simmer over medium heat. Once it starts to boil, remove the lid, reduce the heat to medium-low, and begin to stir-fry. Make sure to mix everything well to prevent burning. Stirring is key to ensuring the sauce evenly coats all the ingredients.
Step 5
When the vegetables are tender and the sauce has melded beautifully, add the cooked ramen noodles and fresh julienned scallion greens. Stir-fry lightly until the ramen noodles are well coated with the sauce. Your delicious Budae-Bokkeum is ready! Serve it over warm rice or enjoy it as is for a fantastic meal.
