Two Bowls of Rice Gone in an Instant! Spicy Braised Tofu and Enoki Mushrooms
After indulging in rich, oily holiday foods, I’m craving something spicy! ♡
Main Ingredients- 1 block firm tofu (approx. 300-350g)
- 1 pack enoki mushrooms (100-150g)
- 1 onion (medium-sized)
- 1 bunch green onions (use both white and green parts)
Spicy Seasoning Sauce- 4 Tbsp gochugaru (Korean chili powder, adjust to taste)
- 1 Tbsp oyster sauce (for umami boost!)
- Pinch of black pepper
- 3 Tbsp oligosaccharide (for shine and sweetness)
- 3 Tbsp soy sauce (for the base flavor)
- 1 Tbsp minced garlic (for aroma)
- 4 Tbsp gochugaru (Korean chili powder, adjust to taste)

- 3 Tbsp oligosaccharide (for shine and sweetness)
- 3 Tbsp soy sauce (for the base flavor)

Cooking Instructions
Step 1
First, prepare your ingredients. Cut 1 block of tofu into bite-sized pieces, about 1.5-2cm thick. Slice the onion into similar-sized pieces or into thin strips. Trim the root end of the enoki mushrooms, then separate the caps. Chop the green onions into manageable pieces.
Step 2
Heat a pan over medium heat and add a mixture of perilla oil and cooking oil in a 1:1 ratio. Pan-fry the tofu pieces until golden brown on both sides. This will give them a nice, crispy texture and a nutty flavor. Set the fried tofu aside on a plate for now.
Step 3
In the same pan used for the tofu, add the sliced onions. Sauté them until they become translucent and slightly softened. The natural sweetness of the onions will release, enriching the overall flavor of the braised dish.
Step 4
Once the onions are cooked to your liking, arrange the prepared enoki mushrooms in the center of the pan. Sprinkle the chopped green onions evenly over the mushrooms.
Step 5
Now, prepare the spicy sauce by mixing all the seasoning ingredients: 4 Tbsp gochugaru, 1 Tbsp oyster sauce, a pinch of black pepper, 3 Tbsp oligosaccharide, 3 Tbsp soy sauce, and 1 Tbsp minced garlic. Pour this sauce mixture evenly over the enoki mushrooms and green onions. Return the fried tofu pieces to the pan, arranging them neatly. Pour in 1 cup (200ml) of water, cover the pan with a lid, and let it simmer over medium-low heat for about 5 minutes. Your delicious and spicy braised tofu and enoki mushrooms are ready to be enjoyed with a bowl of rice!
