Spicy Sauce Ingredients

  • 7 Tbsp Soy sauce
  • 5 Tbsp Gochugaru (Korean chili flakes, adjust to taste)
  • 3 Tbsp Mirin (or cooking wine/cheongju)
  • 3 Tbsp Minced garlic
  • 3 Tbsp Oligodang (corn syrup, adjust sweetness)
  • 3 Pinches Black pepper
  • 500ml Water

Cooking Instructions

Step 1

First, it’s crucial to remove the blood from the pork ribs. Soaking them in cold water for 1 to 2 hours will help eliminate any gamey odors and result in a clean-tasting braised dish.

After draining the ribs, place them in a pot with bay leaves and lightly sear the exterior. If your pot is too small to fully submerge the ribs, stir them around as the liquid comes to a boil to ensure even cooking.

While the ribs are cooking, let’s prepare the vegetables, which are key to a delicious spicy braised ribs! This recipe works wonderfully with just onion and green onion, but feel free to add other vegetables like mushrooms or carrots according to your preference.

Once the outer surface of the ribs turns opaque and looks cooked, turn off the heat. Even after draining the blood, some impurities might float to the surface while cooking. Skim these off at this stage for a cleaner flavor.

Carefully rinse the lightly cooked ribs under cold running water to wash them clean. You’re more than halfway done with making your delicious spicy braised ribs after this step!

Now for the most important part: the sauce! Mix all the sauce ingredients as listed above: soy sauce, gochugaru, mirin, minced garlic, oligodang, black pepper, and water. If you prefer it spicier, you can add an extra 2-3 tablespoons of gochugaru or some chopped fresh chili peppers. (If your gochugaru is very spicy, consider using less than the recommended amount.)

Combine the sauce with the ribs in the pot and simmer until tender and flavorful – your delicious spicy braised ribs are ready! Sprinkle some sesame seeds on top for a beautiful presentation that promises an incredibly satisfying meal.
