In these trying times when energy levels can dip, I’ve prepared a special dish to revitalize my family: spicy braised pork ribs. The fiery kick and deep, savory flavor are perfect for blowing off steam and overcoming challenges, including the current pandemic. Let’s gather around the table and enjoy this hearty meal together!

Main Ingredients

  • 2kg Pork Ribs (cut into manageable pieces)
  • 1/2 Onion (thickly sliced)
  • 1 Carrot (cut into large chunks)
  • 1 Leek (cut into large pieces)
  • 2 Green Chilies (sliced diagonally)
  • Tteokbokki Rice Cakes (tteok) (cut to desired size)
  • 2-3 Bay Leaves
  • 2 Red Chilies (sliced diagonally)

Spicy Braising Sauce

  • 300g Store-bought Pork Rib Marinade (or soy sauce-based sauce)
  • 100g Soy Sauce
  • 3 Tbsp Gochugaru (Korean red chili flakes, adjust for spice level)
  • A pinch of Black Pepper
  • 120ml Onion Juice (for sweetness and depth)
  • 500ml Water
  • 1 Tbsp Sesame Oil
  • 3 Tbsp Minced Garlic

Cooking Instructions

Step 1

Prepare the pork ribs by trimming any excess fat and cutting them into approximately 5-7cm pieces. Ensure the cuts are clean to prevent the bones from splintering.

Soak the prepared pork ribs in cold water for about 2 hours to remove any blood. Change the water once halfway through for optimal results. Thoroughly draining the blood is crucial for a clean, non-gamey flavor.

In a large pot, bring enough water to cover the ribs to a boil. Add the bay leaves and the drained pork ribs. Blanch for 3-5 minutes. This step helps to remove impurities and any residual odor from the ribs.

After blanching, rinse the ribs under cold running water to wash off any scum. Drain them thoroughly in a colander. This preliminary cooking ensures the ribs absorb the sauce better and result in a cleaner taste.

In a wide pot or wok, combine the blanched ribs with all the ‘Spicy Braising Sauce’ ingredients: store-bought marinade, soy sauce, gochugaru, pepper, onion juice, water, minced garlic, and sesame oil. Add the thickly sliced onion, carrot, leek, and red chilies. Mix everything well to ensure the ribs are evenly coated with the sauce. Taste and adjust seasoning if needed.

Cover the pot and simmer over medium heat for at least 30 minutes, or until the ribs are tender. Stir occasionally to prevent sticking, and add a little water if the sauce becomes too dry.

Once the ribs are tender and the sauce has reduced to a thick consistency, add the prepared tteokbokki rice cakes. Continue to simmer for another 7-8 minutes, allowing the rice cakes to absorb the delicious sauce and become chewy. The tteok adds a delightful textural contrast.

Just before serving, sprinkle toasted sesame seeds over the spicy braised pork ribs for an extra layer of nutty flavor and an appealing garnish.
