Main Ingredients

  • 3 sheets of square fish cakes (Eomuk)
  • 1/4 onion
  • 4 cloves garlic
  • 1 Cheongyang chili pepper (or green chili pepper)
  • 1 red chili pepper

Seasoning

  • 2 Tbsp soy sauce
  • 1 Tbsp cooking wine (Mirin)
  • 1 Tbsp sugar
  • 1 Tbsp chili powder (use Cheongyang chili powder for extra spiciness)
  • 2 Tbsp corn syrup or oligosaccharide (for gloss and sweetness)
  • 1 Tbsp sesame oil

Cooking Instructions

Step 1

First, rinse the fish cakes under hot running water to remove any impurities and ensure a cleaner taste. Cut them into bite-sized pieces, about 3-4 cm in length. Slice the onion thinly, mince or thinly slice the garlic. Slice the Cheongyang chili and red chili peppers diagonally. If you prefer it spicier, increase the amount of Cheongyang chili pepper.

Heat about 1 Tbsp of cooking oil in a pan over medium-low heat. Add the sliced garlic and stir-fry until fragrant, being careful not to burn it. Gently sautéing the garlic to release its aroma is key.

Once the garlic is fragrant, add the cut fish cakes and sliced onion to the pan. Stir-fry over medium heat until the fish cakes are lightly golden and the onions become translucent. This step helps to bring out the natural flavors of the ingredients.

Now, add all the seasoning ingredients: soy sauce, cooking wine, sugar, chili powder, and corn syrup. Stir well to coat everything evenly and continue to cook until the sauce thickens slightly. Finally, add the diagonally sliced Cheongyang and red chili peppers and toss quickly.

Once all the ingredients are well combined and the sauce has coated everything, turn off the heat. Drizzle in 1 Tbsp of sesame oil for a glossy finish and a nutty aroma. Give it a final mix, and your delicious spicy braised fish cakes are ready! Serve them over warm steamed rice for a truly satisfying meal.
