Instead of the usual sweet and savory soy sauce marinade, here’s a spicy braised beef short rib recipe that will help you blow away stress! It can be made quickly with no special ingredients, and we’ve used a pressure cooker to shorten cooking time and ensure the flavors penetrate deeply. Main Ingredients- 1kg beef short ribs for braising
- 1/2 onion
- 1 king oyster mushroom
- 1/2 stalk green onion
- 100g glass noodles
Spicy Marinade- 1/2 onion
- 4 Tbsp grated pear
- 1 Tbsp minced garlic
- 1 Tbsp gochujang (Korean chili paste)
- 5 Tbsp soy sauce
- 2 Tbsp spicy Korean chili powder (cheongyang pepper powder)
- 2 Tbsp rice wine (mirin)
- 2 Tbsp corn syrup
- 2 Tbsp sugar
- 1/2 tsp ginger powder
- 1/2 tsp black pepper
- 200ml water
- Cheongyang peppers (to taste)
- 1/2 onion
- 4 Tbsp grated pear

- 5 Tbsp soy sauce
- 2 Tbsp spicy Korean chili powder (cheongyang pepper powder)
- 2 Tbsp rice wine (mirin)
- 2 Tbsp corn syrup

- 1/2 tsp ginger powder
- 1/2 tsp black pepper
- 200ml water
- Cheongyang peppers (to taste)
Cooking Instructions
Step 1
Blood Removal: Soak the beef short ribs in cold water overnight to remove excess blood. Thoroughly removing blood is key to a clean flavor without any gamey smell.
Step 2
Rib Preparation: Trim off any tough membranes and excess fat from the ribs. Removing the membrane between the bone and the meat is especially important for tender ribs.
Step 3
Membrane Removal Tip: Gently scrape the thin membrane with a knife, grab the lifted edge, and carefully pull it off. Be careful not to grab too much meat, as this could separate the meat from the bone.
Step 4
Scoring: Make shallow cuts into thicker parts of the ribs. This helps the marinade penetrate better and enhances the flavor.
Step 5
Making the Marinade: Roughly chop the onion and cheongyang peppers. In a blender or using an immersion blender, combine them with 100ml of the water (to be used for cooking) and blend until smooth. Add the remaining marinade ingredients (grated pear, minced garlic, gochujang, soy sauce, chili powder, rice wine, corn syrup, sugar, ginger powder, black pepper) and blend everything together.
Step 6
Adjusting the Marinade: Taste the blended marinade and adjust the seasoning as needed. I added about half a teaspoon of salt to enhance the savory flavor. If you prefer it sweeter, add more sugar or corn syrup; if you want it spicier, add more chili powder or cheongyang peppers.
Step 7
Layering in the Pressure Cooker: Place the prepared beef short ribs in the pressure cooker with the bone side facing down. This layering helps the marinade soak into the meat more effectively.
Step 8
Adding Marinade and Water: Pour the prepared marinade over the ribs and add the remaining 100ml of water.
Step 9
Adding Aromatics (Optional): For an extra layer of flavor and to help eliminate any potential gamey smell, add 2 bay leaves. You can omit this if you don’t have them. Securely close the pressure cooker lid, ensure the weight is standing upright, and bring to high heat. (Please be sure to understand and follow the safety instructions for your pressure cooker!)
Step 10
Preparing Side Vegetables: While the ribs are cooking, thinly slice the onion. Cut the king oyster mushroom in half lengthwise, then slice it diagonally to match the thickness and length of the onion. Thinly slice the green onion to make green onion threads (pajori).
Step 11
Pressure Cooking: Once the pressure cooker starts to whistle (or the weight jiggles), continue to cook for another 5 minutes. Then, reduce the heat to low and cook for an additional 15 minutes. Turn off the heat and let it rest for 5 minutes to allow the flavors to meld. Carefully release the pressure by tilting the weight.
Step 12
Stir-frying Ribs and Noodles: Carefully remove the tender ribs from the pressure cooker. In the remaining liquid in the pressure cooker, add the glass noodles and sliced onion and stir-fry them.
Step 13
Cooking Mushrooms and Vegetables: Once the onions become translucent, add the prepared king oyster mushrooms and cook until tender. (Optional: If you have carrots, you can cut them into decorative shapes, like flowers, and add them for visual appeal.)
Step 14
Serving: Combine the stir-fried vegetables and noodles with the braised ribs for a final toss. Transfer to a serving dish and garnish with the prepared green onion threads for a beautifully presented and delicious spicy braised beef short ribs!
