  • 1 Zucchini (or Korean squash)
  • 2 Potatoes
  • 1/2 Onion

First, prepare the vegetables. Peel the 2 potatoes and cut them into large, bite-sized cubes, about 1.5cm. Cutting them into larger pieces ensures they hold their shape better as the stew simmers and prevents them from becoming too mushy.

Cut the 1/2 onion into large cubes, similar in size to the potatoes.

Cut the 1 zucchini into large cubes as well. Zucchini cooks quickly, so if you cut it too small, it might break apart. Chunky ingredients make for a more satisfying stew!

Heat a pot over medium heat with a little cooking oil. Add the 150g of beef and stir-fry until the surfaces turn white and are cooked through.

Once the beef is mostly cooked, add 1.5 Tbsp of gochugaru. Reduce the heat to medium-low and stir-fry for about 1 minute until fragrant. Be careful not to burn the chili flakes, as this step helps to create chili oil and deepen the flavor. This also gives the stew a beautiful color.

Once the chili oil has infused, pour in 3 cups of anchovy broth. Dissolve 1 Tbsp of gochujang completely into the broth, ensuring there are no lumps. Bring the stew to a boil over high heat and let it simmer until the beef is tender.

When the beef is nearly cooked, add the potatoes first, as they require longer cooking time. If the broth reduces too much while the potatoes cook, you can add a little more broth. I also added the pre-cut onion at this stage. Adding onion early allows its sweetness to mellow into the broth, enhancing its richness.

Bring the stew to a rolling boil over medium-high heat. Once the potatoes start to become tender (about halfway cooked), add the zucchini. Adding zucchini after the potatoes have had a head start helps maintain its texture.

After the zucchini has simmered for a bit, it’s time to season. Add 1 Tbsp of fish sauce (or anchovy sauce) to add a savory depth. If you don’t have fish sauce, you can use other types like saltier anchovy sauce.

Next, add 2 Tbsp of soup soy sauce to adjust the main seasoning. Using soup soy sauce will give the stew a deeper, more robust flavor.
