Flavorful and Spicy Beef and Radish Soup to Awaken Your Appetite
I usually make clear beef and radish soup, but I tried making it spicy and hearty like they do in the Gyeongsang Province region by adding chili powder! While clear beef soup is delicious, this spicy version is cleaner and truly stimulates the appetite. Just chili powder alone might not provide enough spiciness and a refreshing taste. That’s why I’ve incorporated ‘YeonDu Cheongyang Pepper Essence’ into this recipe. This soup is not only warming but also packed with flavor, making it a perfect meal that requires few side dishes. Enjoy the depth of flavor and umami with ‘YeonDu Essence’ and ‘YeonDu Cheongyang Pepper Essence’.
Main Ingredients- Beef 100g
- Radish 100g
- Tofu 160g
- Green onion 1/2 stalk
Seasoning & Broth- Soup soy sauce 1 Tbsp
- Gochugaru (Korean chili powder) 1 tsp
- Minced garlic 1 tsp
- Broth 600ml
- Sesame oil 1 Tbsp
- YeonDu Cheongyang Pepper Essence 1 Tbsp
- YeonDu Essence 1 Tbsp
- Pepper to taste
- Soup soy sauce 1 Tbsp
- Gochugaru (Korean chili powder) 1 tsp
- Minced garlic 1 tsp
- Broth 600ml
- Sesame oil 1 Tbsp
- YeonDu Cheongyang Pepper Essence 1 Tbsp
- YeonDu Essence 1 Tbsp
- Pepper to taste
Cooking Instructions
Step 1
First, cut the beef into bite-sized pieces (about 2-3 cm). Slice the radish thinly (nak-nak style), and dice the tofu into roughly 1.5 cm cubes.
Step 2
Heat a pot over medium heat and add 1 Tbsp of sesame oil. Sauté the beef until it’s browned on the outside. Once the beef is seared, add the sliced radish and sauté together for about 2-3 minutes until the radish becomes slightly translucent.
Step 3
Now, to make this Gyeongsang-style spicy beef and radish soup, it’s time to add ‘YeonDu Cheongyang Pepper Essence’ and ‘YeonDu Essence’. While using fresh Cheongyang peppers is also good, ‘YeonDu Cheongyang Pepper Essence’ provides a cleaner and deeper spiciness. ‘YeonDu Essence’ helps to enhance the umami of the soup. Add these two ingredients and stir-fry for about 1 minute, mixing them well with the beef and radish.
Step 4
Pour the 600ml of broth into the pot with the sautéed beef and radish. Bring to a boil over high heat, then reduce to medium heat and simmer for about 10 minutes until the radish is tender. Once the radish is tender, add the diced tofu and continue to cook for another 5 minutes.
Step 5
Finally, add the diagonally sliced green onions and a pinch of pepper to finish the soup. If the taste is not quite right, you can adjust it with salt. However, I found the soup perfectly seasoned with the soup soy sauce and YeonDu Essence, so I didn’t need to add extra salt. Adjust the seasoning to your preference.
Step 6
Here are the ‘YeonDu’ products I’ve been enjoying lately. For seasoning namul (seasoned vegetables), ‘YeonDu Essence’ alone is sufficient. For spicy dishes, ‘YeonDu Cheongyang Pepper Essence’ adds a deep flavor and clean umami. These ‘YeonDu’ products elevate the taste of your cooking.
