Spicy Beef and Potato Gochujang Stew
How to Make Deliciously Spicy Beef and Potato Gochujang Stew (Gamja Jjigae)
This is a potato and gochujang stew that my daughter absolutely loves! Since it’s potato season, I’m making it with fluffy and delicious potatoes. The spicy and hearty flavor is perfect for a comforting meal.
Main Ingredients- 200g beef (stew meat)
- 6 potatoes (medium-sized)
- 1 onion (medium-sized)
- 1 green onion
- 1 Korean green chili pepper (add 2 for extra spice)
Seasoning and Broth- 1 Tbsp soy sauce
- 3 Tbsp gochujang (Korean chili paste)
- 1 Tbsp minced garlic
- 1 Tbsp gochugaru (Korean chili powder)
- Pinch of black pepper
- 5 cups water (using a standard paper cup)

Cooking Instructions
Step 1
Cut the beef into bite-sized pieces, about 3-4cm. If they are too small, they might break apart as they cook.
Step 2
In a wide pot or wok, combine the cut beef, 1 Tbsp minced garlic, 1 Tbsp soy sauce, and 3 Tbsp water. Stir-fry over medium heat until the beef is tender and fragrant. This step helps develop a richer flavor.
Step 3
Once the beef is somewhat cooked, add the peeled and chunkily cut potatoes to the pot and stir-fry them together. Lightly coating the potatoes in the beef juices adds extra deliciousness to the stew.
Step 4
Now it’s time to build the stew’s flavor! Add 3 Tbsp gochujang, 1 Tbsp gochugaru, and a pinch of black pepper to the stir-fried ingredients. Pour in 2.5 cups of water (for a total of 5 cups) and stir well to dissolve the pastes.
Step 5
Bring the stew to a rolling boil over high heat with the lid off, and let it cook for about 3 minutes. Boiling it uncovered at this stage helps to remove any raw taste from the gochujang and deepens the spicy broth flavor.
Step 6
While the stew is boiling, thinly slice the onion, diagonally slice the green onion, and finely chop the Korean green chili pepper. If you prefer it spicier, add more chili peppers or leave the seeds in.
Step 7
After the initial 3-minute boil, add the prepared onion, green onion, and Korean green chili pepper to the pot. The vegetables will add more depth and flavor to the broth.
Step 8
After adding the vegetables, reduce the heat to medium, cover the pot, and simmer for about 7 more minutes. It’s important to let it cook until the potatoes and vegetables are fully tender and soft.
Step 9
Finally, taste the stew and adjust the seasoning to your family’s preference. You can add more soy sauce or salt if needed. Enjoy your perfectly seasoned Beef and Potato Gochujang Stew!
