Main Ingredients

  • 340g Ground Beef
  • 150g Korean Green Chili Peppers (Cheongyang)
  • 200g Green Bell Peppers

Seasoning Ingredients

  • 1 Tbsp Mirin (Rice Wine)
  • 2 Tbsp Soy Sauce
  • 1 Tbsp Perilla Oil
  • 1 Tbsp Minced Garlic
  • Pinch of Black Pepper

Sauce Ingredients

  • 3 Tbsp Anchovy Fish Sauce
  • 2 Tbsp Tuna Extract
  • 4 Tbsp Perilla Oil
  • 2 Tbsp Sugar

Cooking Instructions

Step 1

In a bowl, combine the 300g of ground beef with 1 Tbsp mirin, 2 Tbsp soy sauce, 1 Tbsp perilla oil, 1 Tbsp minced garlic, and a pinch of black pepper. Mix well until the mixture becomes cohesive and slightly sticky, allowing it to marinate.

Wash the Korean green chili peppers and green bell peppers thoroughly. Pat them completely dry. Finely mince them, aiming for a diced texture. If you prefer more heat, feel free to increase the amount of Korean green chili peppers.

Lightly grease a heated pan with a little cooking oil. Add 2 Tbsp of sugar and cook over medium-low heat, stirring constantly, until the sugar melts and caramelizes into a liquid state. Once the sugar has liquefied, add the marinated ground beef. Break up any clumps and stir-fry until most of the moisture released from the beef has evaporated. This process helps develop a richer flavor in the beef.

Once the beef is well-fried, add 2 Tbsp tuna extract and 2-3 Tbsp anchovy fish sauce. Continue to stir-fry, stirring occasionally, until any excess moisture evaporates. This step allows the savory flavors of the fish sauce to deeply penetrate the meat.

Add the minced peppers and 3-4 Tbsp of perilla oil to the pan. Stir-fry together just until the peppers soften slightly, retaining some of their crispness. The key here is to preserve the pleasant bite of the peppers.

Finally, pour in 100-150ml of water. Bring to a simmer over medium heat and continue to cook until the sauce thickens and becomes glossy, with most of the liquid absorbed. Your delicious Spicy Beef and Pepper Mince is now ready! It’s absolutely wonderful served over a bowl of hot rice.
