Spicy Beef and Bean Sprout Stir-fry
How to Make a Delicious Spicy Beef and Bean Sprout Stir-fry (Thinly Sliced Beef, Brisket, or Pork Belly are great substitutes!)
As a bean sprout lover, I’ve made a deliciously spicy stir-fry packed with plenty of bean sprouts. It’s perfect as a side dish for rice or as a flavorful accompaniment to drinks!
Main Ingredients- 400g thinly sliced beef (such as beef brisket, beef ribs, or pork belly)
- 220g fresh bean sprouts
- 1/3 onion
- A small amount of cabbage (optional)
- 10 stalks of chives
- 1 Tbsp chopped green onion
- 5 dried bird’s eye chilies
Seasoning & Others- 2 Tbsp cooking oil
- 1 Tbsp oyster sauce
- A pinch of black pepper
- A sprinkle of toasted sesame seeds (for garnish)

Cooking Instructions
Step 1
Prepare all the vegetables by washing and trimming them. Finely chop the green onion. Slice the onion and cabbage thinly into strips. Cut the chives to a similar length as the onion slices.
Step 2
Rinse the bean sprouts thoroughly under running water. Place them in a colander to drain excess water completely. Leaving them wet can make the stir-fry mushy.
Step 3
You can use the beef directly from frozen without thawing. This helps prevent it from clumping together during cooking. Feel free to use beef brisket, beef ribs, or pork belly – whichever you prefer!
Step 4
Heat 2 tablespoons of cooking oil in a large pan over medium-low heat. Add the chopped green onions and sauté until fragrant, being careful not to burn them.
Step 5
Once the green onions are aromatic, add the dried bird’s eye chilies and stir-fry them together. You can tear them by hand or cut them with scissors or a knife for a more potent spicy aroma.
Step 6
When the spicy and green onion aromas have nicely mingled, add the prepared beef to the pan and stir-fry. Whether you’re using beef brisket, beef ribs, or pork belly, it will taste great.
Step 7
Continue to cook the beef until it is about 80-90% cooked through. The rendered fat from the meat will add extra flavor to the dish.
Step 8
Turn the heat up to high. Add the sliced cabbage and onion to the pan and stir-fry quickly over high heat. Cook for about a minute, or until the vegetables start to soften slightly.
Step 9
Once the cabbage and onion are slightly tender, add the well-drained bean sprouts. Be careful not to overcook the bean sprouts, as they will lose their crisp texture.
Step 10
Add 1 tablespoon of oyster sauce to season the stir-fry. Taste and if it’s not salty enough, add a little more oyster sauce and stir-fry quickly. The oyster sauce alone provides a delicious seasoning.
Step 11
Finally, sprinkle with black pepper for added aroma and then remove from heat. Give everything a final gentle toss to combine.
Step 12
Transfer the stir-fry to a serving dish. Garnish with a sprinkle of toasted sesame seeds if desired. Your delicious and spicy beef and bean sprout stir-fry is ready to be enjoyed with a warm bowl of rice!
