My husband and I often have ramen for lunch on weekends. This time, since my partner had a late night out drinking, I decided to make a delicious hangover ramen using bean sprouts, a recipe that truly hits the spot.

Ingredients

  • 1 packet Shin Ramyun (or your preferred spicy ramen)
  • 60g fresh bean sprouts
  • 55g ripe kimchi
  • 15g green onion
  • 3 Tbsp kimchi brine
  • A pinch of black pepper (freshly ground)
  • 600ml water

Cooking Instructions

Prepare one packet of ramen. Take out the ramen noodles, dried vegetable packet, and soup base packet.

Chop the kimchi into approximately 1cm pieces and thinly slice the green onion. Prepare 3 tablespoons of kimchi brine.

Place the bean sprouts in a bowl with enough water to cover them. Gently swish them with your hands, changing the water 3-4 times to thoroughly rinse. Drain the bean sprouts in a colander.

Pour 600ml of water into a pot and bring it to a boil over high heat.

Once the water is boiling vigorously, add the ramen noodles, soup base packet, and dried vegetable packet.

After adding the ramen, gently loosen the noodles with chopsticks to ensure they cook evenly. Cooking the ramen according to the time specified on the package will result in the most delicious noodles.

Once the noodles have loosened and the soup is boiling again, add the prepared kimchi brine, chopped kimchi, and bean sprouts. Stir gently to combine.

If you prefer your ramen noodles to be al dente, you can lift and drop the noodles with chopsticks a few times while they are cooking to achieve a firmer texture. Adding about 1 tablespoon of vinegar at this stage can also enhance the flavor.

When the ramen is almost perfectly cooked, add the sliced green onions, stir them in briefly, and then turn off the heat.

Transfer the bean sprout ramen to a bowl. Sprinkle with freshly ground black pepper for a final touch. This completes our delicious bean sprout hangover ramen recipe!
