Spicy Bean Sprout and ‘Unlimeat’ Bulgogi (Vegan)
[Vegan] Bean Sprout Bulgogi Alternative: Deliciously Savory ‘Unlimeat’ Bulgogi
This special recipe introduces how to make a delicious vegan bean sprout bulgogi using Unlimeat’s plant-based protein! Instead of pork, Unlimeat’s soy protein offers a texture remarkably similar to thinly sliced pork belly or bulgogi meat, making it perfect for bean sprout bulgogi or even a jeyuk bokkeum (spicy stir-fried pork). Packed with rich flavors and plenty of vegetables for a healthy meal, this vegan bean sprout bulgogi is easy to make at home. Though this is my first recipe post, I hope it brings joy to your dining table. Enjoy your meal!
Main Ingredients
- Unlimeat Soy Protein 600g (thawed)
- 1 Onion (sliced thinly)
- 1 Green Onion (sliced diagonally)
- 240g Bean Sprouts (washed thoroughly)
- 1 Enoki Mushroom (trimmed)
Spicy & Sweet Seasoning Sauce
- 3.5 Tbsp Soy Sauce
- 4 Tbsp Gochujang (Korean chili paste)
- 2 Tbsp Gochugaru (Korean chili flakes)
- 2 tsp Minced Garlic
- 3 Tbsp Muscovado Sugar (or brown sugar)
- 1 Tbsp Sesame Oil
- 1 Tbsp Yeondu (Korean savory seasoning)
- 1 tsp Minced Cheongyang Pepper (optional, adjust spiciness)
- Salt to taste (optional)
- 3.5 Tbsp Soy Sauce
- 4 Tbsp Gochujang (Korean chili paste)
- 2 Tbsp Gochugaru (Korean chili flakes)
- 2 tsp Minced Garlic
- 3 Tbsp Muscovado Sugar (or brown sugar)
- 1 Tbsp Sesame Oil
- 1 Tbsp Yeondu (Korean savory seasoning)
- 1 tsp Minced Cheongyang Pepper (optional, adjust spiciness)
- Salt to taste (optional)
Cooking Instructions
Step 1
Unlimeat soy protein is frozen, so please thaw it first. Fill a large bowl with lukewarm water and place the Unlimeat package in it to thaw gently. (Using hot water might raise concerns about environmental hormones from plastic contact, so lukewarm water is recommended.)
Step 2
While the Unlimeat is thawing, prepare the vegetables. Slice the green onion lengthwise like julienne. Slice the onion thinly and lengthwise along its grain. Trim the base of the enoki mushroom. Wash the bean sprouts thoroughly and remove any damaged parts. Tip: Instead of green onions, fragrant perilla leaves can also be used for a wonderful aroma. Wash the perilla leaves, fold them in half, and slice them lengthwise, or you can add them whole. Choose your preferred preparation!
Step 3
In a mixing bowl, combine all the ingredients for the seasoning sauce and mix them well. (The photo shows part of the mixing process.) Tip: If you like it spicier, add minced Cheongyang peppers to your liking or use a spicier gochujang!
Step 4
Now it’s time to layer the prepared ingredients in a hot pot or large pan. (The photo shows the layers from top left to right, then bottom left to right.) 1. Lay the bean sprouts at the bottom of the pot. 2. Arrange the sliced onions on top. 3. Place the thawed Unlimeat soy protein in the center. 4. Surround the Unlimeat with the enoki mushrooms. 5. Evenly drizzle the prepared seasoning sauce over everything. 6. Finally, artistically arrange the diagonally sliced green onions on top.
Step 5
Cover the pot with a lid and cook over medium heat for 3 minutes, then reduce to low heat and simmer for 7 minutes. When the time is up, open the lid and stir to combine the ingredients and sauce. Once everything is well mixed and cooked, turn off the heat and serve!
