- Gochugaru (Korean chili powder) 1 Tbsp
- Sugar 3 Tbsp
- Vinegar 3 Tbsp
- Cooking wine (Mirin) 2 Tbsp
- Minced garlic 1 Tbsp
- Sesame oil 1 Tbsp
- Sesame seeds 1 Tbsp
- Gochujang (Korean chili paste) 3 Tbsp
- Gochugaru (Korean chili powder) 1 Tbsp

Cooking Instructions
Step 1
Cut the skate fin meat in half and prepare. Ensure the skate fin is fresh for the best flavor and texture.

Thinly julienne the radish. It’s best to cut it into fine strips to absorb the dressing well.

Cut the water dropwort into 4-5cm pieces. This herb adds a refreshing, slightly peppery note.
