Braised Flatfish: A Delicious Fish Side Dish Recipe Perfect for Home-Cooked Meals
Introducing a recipe for a savory and delicious braised flatfish side dish, made with fresh flatfish and aromatic vegetables. It’s so good, it’ll make you want to eat more rice! Enjoy the tender, moist flatfish flesh paired with soft, stewed radish.
Main Ingredients- 2 Flatfish
- 1/4 Radish (approx. 150g)
- 1/4 Onion
- 1/2 Green Onion (Scallion)
- 2 Korean Green Chilies (Cheongyang peppers)
Seasoning Sauce- 1 Tbsp Soy Sauce for Soup (Guk-ganjang)
- 1 Tsp Doenjang (Fermented Soybean Paste)
- 1 Tbsp Red Pepper Flakes (Gochugaru)
- 1/3 Tbsp Minced Garlic
- 1/3 Tbsp Ginger Syrup (or a little minced ginger)
- 1 Tbsp Cooking Wine (Mirin, etc.)
- 1 Tbsp Soy Sauce for Soup (Guk-ganjang)
- 1 Tsp Doenjang (Fermented Soybean Paste)
- 1 Tbsp Red Pepper Flakes (Gochugaru)
- 1/3 Tbsp Minced Garlic
- 1/3 Tbsp Ginger Syrup (or a little minced ginger)
- 1 Tbsp Cooking Wine (Mirin, etc.)
Cooking Instructions
Step 1
First, slice the radish about 1cm thick and place it at the bottom of the pot. Slightly simmering the radish like this helps to remove any fishy smell and allows the radish to absorb the seasoning well, making it even more delicious.
Step 2
Clean the flatfish by scraping off the scales. You can leave the fins and tail as they are (or remove the head if preferred). Make 3-4 diagonal slits on the back of the fish; this helps the seasoning penetrate the flesh better. Place the prepared flatfish attractively over the simmering radish.
Step 3
Slice the onion into strips, and cut the green onion and Korean green chilies diagonally. After placing the flatfish in the pot, add the prepared vegetables and all the seasoning sauce ingredients. Pour in enough water to cover the ingredients halfway. Bring to a boil over high heat.
Step 4
One of the secrets to successfully making delicious braised fish is to cook it with the lid off. This effectively removes any fishy odors, allowing you to enjoy a cleaner taste. Pre-simmering the radish beforehand also aids in eliminating fishy smells.
Step 5
Reduce the heat to medium and continue to braise, spooning the broth over the flatfish. Once the broth has thickened and the seasoning has well coated the fish, your delicious braised flatfish is complete. Enjoy it with a warm bowl of rice!
