Spicy and Tangy Stir-Fried Squid Recipe
Perfect for a Picky Appetite! Sweet, Sour, and Spicy Stir-Fried Squid
Introducing a squid stir-fry recipe that will awaken your appetite on a bright, sunny day! Although squid is famously called ‘geumjing-eo’ (gold squid) due to its preciousness, its taste is truly exceptional. It’s also incredibly delicious when mixed with somen or jjolmyeon noodles! Enjoy the fantastic harmony of sweet, sour, spicy sauce and chewy squid!
Main Ingredients- 1 squid
- 1/4 onion
- 1/5 carrot
- 1/2 cucumber
- 5 sprigs of chives (minari)
Sauce Ingredients- 1 Tbsp gochujang (Korean chili paste)
- 2 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp minced garlic
- 1 Tbsp soy sauce
- 1.5 Tbsp sugar
- 1 Tbsp oligodang (corn syrup)
- 1 Tbsp maesilcheong (green plum syrup)
- 4 Tbsp vinegar
- 1 Tbsp gochujang (Korean chili paste)
- 2 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp minced garlic
- 1 Tbsp soy sauce
- 1.5 Tbsp sugar
- 1 Tbsp oligodang (corn syrup)
- 1 Tbsp maesilcheong (green plum syrup)
- 4 Tbsp vinegar
Cooking Instructions
Step 1
First, let’s prepare the vegetables. Thinly slice the onion. Cut the cucumber in half lengthwise, then slice it into 0.5 cm thick half-moons. Slice the carrot similarly to the cucumber, in half-moons of the same thickness. For the chives, remove any wilted or dirty leaves and cut the stems into approximately 5cm lengths.
Step 2
Now, it’s time to prepare the squid. Wash the squid thoroughly. Then, bring a pot of water to a rolling boil, add 1/2 Tbsp of salt, and blanch the squid for about 1 minute. (Tip: Squid skin is rich in beneficial compounds like taurine, which aids in recovery from fatigue. However, if you find it difficult to digest, you can remove the skin before cooking.)
Step 3
Once blanched, remove the squid from the boiling water and let it cool slightly. Cut the squid in half lengthwise, then slice it into bite-sized pieces, about 1 to 1.5 cm wide. Next, prepare the sauce by mixing all the sauce ingredients: gochujang, gochugaru, minced garlic, soy sauce, sugar, oligodang, maesilcheong, and vinegar.
Step 4
In a large bowl, combine the prepared vegetables and sliced squid. Pour the prepared sauce over them. Gently mix everything together with your hands until the sauce is evenly distributed. Finish by sprinkling some toasted sesame seeds on top. (Important Note: Adding sesame oil at this stage can reduce the tanginess of the vinegar, so it’s best to omit it for this dish.) Enjoy this freshly mixed squid stir-fry as is, or for an even more satisfying meal, mix it with somen or jjolmyeon noodles to create a delicious noodle dish.
