It’s incredibly refreshing with its perfect balance of spicy, sour, and sweet flavors – a true appetite booster when you’re not feeling hungry. My family absolutely loved it, so I highly recommend giving this recipe a try!
Main Ingredients- 2 fresh cucumbers
- 1 crisp onion
- 1/2 green onion
Flavorful Seasoning- 5 cloves minced garlic (approx. 1/2 Tbsp)
- 1.5 tsp gochugaru (Korean chili flakes)
- 1 tsp gochujang (Korean chili paste)
- 1 tsp soy sauce
- 2 tsp sugar
- 1 tsp sesame oil
- 2 tsp vinegar
- 5 cloves minced garlic (approx. 1/2 Tbsp)
- 1.5 tsp gochugaru (Korean chili flakes)
- 1 tsp gochujang (Korean chili paste)
- 1 tsp soy sauce
- 2 tsp sugar
- 1 tsp sesame oil
- 2 tsp vinegar
Cooking Instructions
Step 1
First, thoroughly wash the cucumbers under running water and pat them dry. Peel the onion and slice it into thick shreds. Finely chop the green onion, focusing on the white parts. It’s important to prepare all these ingredients into bite-sized pieces.
Step 2
Now, let’s make the delicious seasoning! In a bowl, combine the minced garlic, gochugaru, gochujang, soy sauce, sugar, sesame oil, and vinegar. Stir everything together with a spoon until well combined. Mixing all the seasonings thoroughly is the secret to a great-tasting dressing.
Step 3
Pour the prepared seasoning mix over the chopped vegetables. Wash your hands thoroughly and gently mix everything together with your hands, ensuring the seasoning coats the vegetables evenly. Be careful not to mix too vigorously, as this can make the cucumbers mushy. Gently toss until well combined. Your delicious cucumber salad is now ready!
Step 4
You can enjoy the cucumber salad right away, but for an even more refreshing and crisp texture, transfer it to a container, cover, and chill in the refrigerator. This cold cucumber salad is perfect for hot days or when you need a little something to kickstart your appetite – it’ll have you finishing your rice in no time!
