The key to great Kimchi Fried Rice is well-fermented kimchi. Using kimchi that is not overly sour and still retains a crisp texture will make it even more delicious. The kimchi juice can make the fried rice soggy, so it’s best to use mostly the solid kimchi pieces.

Whether you use cold rice or frozen rice, either works perfectly. Fried rice is an excellent way to use up leftover rice. If using frozen rice, make sure to thaw it beforehand or break it apart well while stir-frying to prevent clumps.

Now for the final touch! Once the rice and kimchi are well combined, add the oyster sauce. Since kimchi is already seasoned, start with just 0.5 Tbsp of oyster sauce.
