Main Ingredients- 300g prepared deodeok
- 1 Tbsp minced scallions
Seasoning Ingredients- 1 Tbsp gochujang (Korean chili paste)
- 1 Tbsp gochugaru (Korean chili flakes)
- 1 tsp minced garlic
- 1 Tbsp double-strength vinegar
- 1.5 Tbsp sugar
- 1 pinch salt
- 1 Tbsp toasted sesame seeds
- 1 Tbsp gochujang (Korean chili paste)
- 1 Tbsp gochugaru (Korean chili flakes)
- 1 tsp minced garlic
- 1 Tbsp double-strength vinegar
- 1.5 Tbsp sugar
- 1 pinch salt
- 1 Tbsp toasted sesame seeds
Cooking Instructions
Step 1
First, prepare the deodeok. After peeling, split the deodeok vertically into 2-4 strips, ensuring they are not too thick. Aim for a thickness similar to what you’d use for stir-fried doraji (balloon flower root). This step is crucial for preserving the deodeok’s unique aroma and texture.
Step 2
Sprinkle the minced scallions and toasted sesame seeds evenly over the prepared deodeok. The fragrant scallions and nutty sesame seeds will enhance the overall flavor profile.
Step 3
In a separate bowl, combine the gochujang, gochugaru, minced garlic, sugar, double-strength vinegar, and a pinch of salt to create the seasoning. Mix well until all ingredients are incorporated. Taste the seasoning and adjust the flavor according to your preference – feel free to add more sweetness, tanginess, or saltiness.
Step 4
Pour the prepared seasoning over the deodeok and gently toss to coat. Be careful not to break the deodeok while mixing. The key is to coat all the pieces evenly without overmixing, which can make it mushy. Aim for a light, even coating to maintain the crispiness.
Step 5
Before serving, give the deodeok salad a final gentle toss. For this sweet and tangy salad featuring vinegar, it’s best to omit sesame oil or perilla oil to highlight the deodeok’s clean flavor and crisp texture. Boost your immune system with this delicious and refreshing deodeok salad!
