Inspired by a cooking show that featured freshly harvested clams, I’ve created an easy and delicious clam meat salad recipe! Even without fresh clams, you can use frozen clam meat to make a delightful salad. This clam salad is made with a simple yet flavorful sweet and spicy dressing using ingredients like gochujang, chili powder, vinegar, and honey. It’s perfect served as bibimbap (mixed noodles) by adding somen noodles, or mixed into rice. Enjoy this refreshing salad when you’re craving something zesty!
Main Ingredients- 500g Frozen clam meat
- 1 Soju cup (soju) for boiling and removing fishy smell
- 25 assorted lettuce leaves (e.g., red leaf lettuce, perilla leaves, romaine, chicory, your preference)
Cooking Instructions
Step 1
Prepare the frozen clam meat. If using fresh clams, wash them thoroughly and purge them of sand before cooking. (Frozen clam meat can be used directly without purging.) Bring a pot of water to a rolling boil. Once boiling, add the clam meat and cook for about 10 minutes. They are done when they float to the surface. Be careful not to overcook, as they can become tough.
Step 2
Don’t discard the clam cooking water! Once cooled, pour it into a water bottle and store it in the refrigerator. This clam broth can be used as a flavorful base for ramen, stews, or other soups.
Step 3
Drain the cooked clam meat thoroughly using a sieve. Ensuring the clam meat is well-drained will help the dressing adhere better and prevent a watery salad.
Step 4
Now, let’s make the delicious dressing! In a bowl, combine 4 Tbsp gochujang, 3 Tbsp gochugaru, 1 Tbsp minced garlic, 2 Tbsp mirin, 3 Tbsp vinegar, 4 Tbsp honey, 3 Tbsp finely chopped green onion, and 1 Tbsp sesame oil. Mix well until thoroughly combined. Taste the dressing and adjust the seasoning as needed, adding more gochujang or salt if it’s too bland. Add more vinegar for extra tanginess or honey/sugar for sweetness.

Wash the assorted lettuce leaves clean, pat them completely dry, and then slice them into bite-sized strips. You can use any kind of lettuce you prefer, or any leftover greens you have in your fridge.

Add the sliced lettuce to the prepared dressing and gently toss to coat the leaves. Let it sit for a moment for the flavors to meld.

Add the well-drained clam meat to the dressed lettuce. Gently mix everything together with your hands, ensuring the clam meat is evenly coated with the dressing. Be gentle to avoid mashing the clam meat.
Step 8
Finally, drizzle with 1 Tbsp of sesame oil and sprinkle with 1 tsp of toasted sesame seeds for added aroma and nutty flavor. Give it one last gentle toss. Your clam meat salad is ready!
