On sweltering summer days, don’t you often crave noodles instead of rice? Personally, I find myself reaching for noodles more often than rice when the weather is hot. Today, I’m sharing a recipe for bibim buckwheat noodles that’s refreshingly spicy and tangy, perfect for awakening your appetite. It’s made with simple ingredients you likely have at home, making it an ideal quick meal for one or a delightful noodle dish for any occasion. The combination of chewy buckwheat noodles, crisp vegetables, and a perfectly balanced dressing is truly wonderful!
Main Ingredients- 100g Buckwheat noodles
- 1/3 Cucumber
- 1/4 Onion
Spicy & Sweet Bibim Sauce- 1 Tbsp Gochujang (Korean chili paste)
- 2.5 Tbsp Vinegar
- 1 Tbsp Sugar
- 1/2 Tbsp Minced garlic
- 1 Tbsp Gochujang (Korean chili paste)

Cooking Instructions
Step 1
First, let’s prepare the onion, which will add a refreshing crunch to your bibim buckwheat noodles. Peel the onion, wash it thoroughly under running water, and then thinly julienne it.

To remove any harshness and enhance its crispness, soak the julienned onion in cold water for about 10 minutes. Using ice water will yield even better results.

After 10 minutes, drain the onion thoroughly using a sieve.

Wash the cucumber, remove the seeds if necessary, and julienne it thinly, just like the onion.

Now, let’s make the bibim sauce that will truly awaken your taste buds. In a small bowl, combine 1 tablespoon of gochujang, 2.5 tablespoons of tangy vinegar, 1 tablespoon of sweet sugar, and 1/2 tablespoon of fragrant minced garlic. Mix everything well with a spoon or chopsticks until it’s evenly blended. Taste and adjust seasoning to your preference, but try to maintain the ideal ratio of spicy, sour, and sweet for the best flavor.

Repeating this process a couple of times will result in noodles that are wonderfully chewy and springy. The best way to check if the noodles are perfectly cooked is to take a strand and taste it.

Once the noodles are cooked, drain them in a sieve, discard the hot water, and rinse the noodles under cold running water. Rub the noodles gently with your hands while rinsing to remove excess starch for a cleaner taste. After rinsing, drain them thoroughly in the sieve, shaking well to remove all excess water.

Arrange the drained buckwheat noodles attractively in a serving bowl. Then, generously spoon the prepared spicy and sweet bibim sauce over the noodles.
