Main Ingredients
  • 100g cooked whelk (or clam meat, abalone, etc.)
  • 2 Korean green chili peppers
  • A little bit of green onion
  • 1/2 small onion
  • A little bit of carrot
  • 1 slice of cheese

Seasoning Ingredients
  • 1/2 Tbsp soy sauce
  • 1 Tbsp oyster sauce
  • 1 Tbsp gochugaru (Korean chili flakes)
  • 1/2 Tbsp minced garlic
  • 1/2 Tbsp oligosaccharide (or corn syrup)
  • 1/2 Tbsp plum extract
  • A pinch of black pepper (a dash)
  • 3 Tbsp cooking wine (mirin)
  • 1/2 soju cup of water (approx. 50ml)

Cooking Instructions

Step 1

First, wash the whelks thoroughly to remove any mucus or grit from their surface. Gently scrub them under running water.

Step 2

Place the cleaned whelks in a pot and add just enough water to cover them. Bring to a boil over high heat, then reduce to medium-low heat and simmer for about 20 minutes. Be careful not to overcook, as they can become tough.

Step 3

Once cooked, let the whelks cool slightly. Carefully remove the meat from the shells using chopsticks. Discard the hard ‘eye’ part, and separate the meat from the innards. (You can choose to remove or use the innards according to your preference.) Finely chop the whelk meat.

Step 4

Finely mince the onion, carrot, and green chili peppers. Slice the green onion. Combine the chopped whelk meat with these chopped vegetables in a pan.

Step 5

Now it’s time to add all the seasoning ingredients. Add soy sauce, oyster sauce, gochugaru, minced garlic, oligosaccharide, plum extract, and black pepper. Mix well to combine.

Step 6

Pour in the cooking wine and water. Stir everything together and cook over low heat until the mixture is slightly reduced and saucy. It’s best to cook it until there’s a light glaze, not too dry, so it’s perfect for mixing with rice.

Serve warm rice in a bowl, and generously top it with the delicious cooked whelk mixture.
