Main Ingredients

  • 150g canned tuna (drained)
  • 1-2 servings somyeon noodles (about 100g-200g)
  • 1/2 zucchini (julienned)
  • 1/2 onion (julienned)
  • 3 slices carrot (sliced diagonally)
  • 2 Cheongyang peppers (finely chopped for a spicy kick)

Seasoning Sauce

  • 1 Tbsp gochujang (Korean chili paste – the base of our spicy flavor!)
  • 1 Tbsp oyster sauce (adds umami)
  • 1 Tbsp soy sauce (for saltiness and depth)
  • 2 Tbsp sugar (balances the spiciness with sweetness)
  • 2 Tbsp gochugaru (Korean chili flakes – add more if you like it extra spicy!)
  • 1 tsp minced garlic (boosts the flavor!)
  • 1 cup water (to achieve the perfect consistency)

1. Boil Water for Noodles: Bring a generous amount of water to a boil in a pot, enough to cook about two packs of ramen. Ample water is key to prevent the noodles from sticking together.

2. Prepare Vegetables: Thinly slice the zucchini into half-moons and julienne the onion. Slice the carrots diagonally and finely chop the Cheongyang peppers. Prepping the vegetables beforehand will speed up your cooking process.

3. Make the Delicious Seasoning Sauce: In a bowl, combine 1 Tbsp gochujang, 1 Tbsp oyster sauce, 1 Tbsp soy sauce, 2 Tbsp sugar, 2 Tbsp gochugaru, 1 tsp minced garlic, and 1 cup of water. Whisk until all ingredients are well combined. Make sure the sugar is dissolved for a smooth sauce!

4. Cook and Drain Noodles: Once the water is boiling, add the somyeon noodles and cook until chewy and al dente. Rinse the cooked noodles under cold water to remove excess starch, then drain thoroughly in a colander. This step ensures the noodles remain firm and springy.

5. Sauté Vegetables and Tuna: Heat a little oil in a pan over medium heat. First, add the carrots and sauté briefly, then add the onions and zucchini, cooking until they are slightly softened. Finally, add the drained canned tuna and stir-fry lightly.

6. Simmer with Sauce: Pour the prepared seasoning sauce over the sautéed vegetables and tuna. Bring to a boil over medium heat, then reduce to low heat and simmer for about 2 minutes. This allows the flavors to meld beautifully into the ingredients.
