Cooking Instructions
Step 1
Start by preparing the flavorful broth, the foundation of your tteokbokki. Pour 500ml of the anchovy-kelp broth into a pot. Add 3 Tbsp of gochujang and 1 Tbsp of soy sauce, whisking them thoroughly until well combined and no lumps remain. (See @6935857 for broth preparation instructions).
Step 2
Prepare the rice cakes by slicing them if they are long, and cut the fish cakes into bite-sized pieces (like triangles or squares). Add the prepared rice cakes and fish cakes to the broth mixture. Stir in 1/2 Tbsp of gochugaru, 2 Tbsp of sugar, and 1 Tbsp of oligosaccharide. Mix everything gently to ensure the ingredients are evenly coated with the sauce.
Step 3
Bring the mixture to a boil over medium-high heat. Once it starts to bubble vigorously, reduce the heat to medium. Continue to simmer until the rice cakes are tender and chewy, and the sauce has thickened slightly, about 5-7 minutes. Stir occasionally to prevent the rice cakes from sticking to the bottom of the pot.
Step 4
Once the rice cakes and fish cakes are cooked to your desired tenderness, add the diagonally sliced green onion. Stir gently for another minute, allowing the fresh onion flavor to meld into the sauce. Your delicious tteokbokki is now ready to be served hot!
