Main Ingredients- 2 blocks of firm tofu (cut into cubes)
- 1 handful of well-fermented kimchi (chopped)
- 1 egg
Seasoning Mix- 1 Tbsp soy sauce
- 1 Tbsp sugar
- 1/2 Tbsp minced garlic
- 1 Tbsp gochugaru (Korean chili flakes)
- 1/2 Tbsp sesame oil
- 1 Tbsp soy sauce
- 1 Tbsp sugar
- 1/2 Tbsp minced garlic
- 1 Tbsp gochugaru (Korean chili flakes)
- 1/2 Tbsp sesame oil
Cooking Instructions
Step 1
First, gently pat the tofu blocks dry with paper towels, then cut them into approximately 1.5 cm cubes. Heat a generous amount of grapeseed oil in a pan over medium heat. Carefully pan-fry the tofu cubes until all sides are golden brown and slightly crispy. Be gentle to prevent them from breaking.
Step 2
Once one side of the tofu is golden brown, flip them over to cook the other sides. When the tofu is almost cooked through, use a spatula to cut them into bite-sized pieces directly in the pan (e.g., into 2-3 smaller pieces). This makes stir-frying easier.
Step 3
Push the cooked tofu to one side of the pan. In the empty space, add the chopped kimchi and about 2-3 tablespoons of kimchi juice. Stir-fry the kimchi until it softens.
Step 4
Now, let’s prepare the seasoning. In a small bowl, combine 1 Tbsp soy sauce, 1 Tbsp sugar, 1/2 Tbsp minced garlic, and 1 Tbsp gochugaru. Mix well. Pour this seasoning mixture over the tofu and kimchi in the pan. Continue to stir-fry over medium heat for about 3-4 minutes, until the kimchi is tender and the sauce coats the tofu and kimchi evenly.
Step 5
Once the kimchi and tofu are well coated with the sauce and thoroughly stir-fried, turn off the heat. Drizzle in 1/2 Tbsp of sesame oil for a fragrant finish and gently toss everything together. Adding sesame oil at the end preserves its aroma.
Step 6
Wipe the pan clean or use a separate non-stick pan. Add a little grapeseed oil and heat over medium heat. Fry an egg to your liking. If you prefer a runny yolk, be careful not to break it. If you like it well-done, you can break and scramble the yolk as it cooks.
Step 7
Serve a generous portion of warm rice in a bowl. Top the rice with the delicious stir-fried tofu and kimchi mixture. Finally, carefully place the fried egg on top. Mix everything together and enjoy this delightful meal! For an extra touch, you can sprinkle some toasted sesame seeds over the top.
