How to Make Stir-fried Sundae: The Golden Recipe
I was craving some delicious stir-fried sundae, so I decided to make it! This dish features chewy sundae, crisp vegetables, and slippery glass noodles, all coated in a savory and slightly sweet sauce. It’s perfect for when you need a flavorful pick-me-up.
Ingredients (for 2 servings)- Sundae (Korean blood sausage) – 2 servings (approx. 400g)
- Glass noodles – 1/2 handful (approx. 50g dried)
- Assorted vegetables – 1 handful (e.g., onion, carrot, cabbage, green and red chili peppers)
- Green onion – 1/2 stalk
- Perilla leaves (kkaennip) – 5 leaves
Stir-fry Sauce- Gochujang (Korean chili paste) – 0.5 Tbsp
- Minced garlic – 0.5 Tbsp
- Ssamjang (Korean soybean paste) – 0.25 Tbsp
- Ground perilla seeds – 2 Tbsp
- Sugar – 1 Tbsp
- Gochugaru (Korean chili flakes, fine) – 2 Tbsp
- Soy sauce (or seasoned soy sauce) – 3 Tbsp
- Sesame oil – 2 Tbsp
- Black pepper – a pinch (a few twists)
- Water – 1 soju cup (approx. 50ml)
- Gochujang (Korean chili paste) – 0.5 Tbsp
- Minced garlic – 0.5 Tbsp
- Ssamjang (Korean soybean paste) – 0.25 Tbsp
- Ground perilla seeds – 2 Tbsp
- Sugar – 1 Tbsp
- Gochugaru (Korean chili flakes, fine) – 2 Tbsp
- Soy sauce (or seasoned soy sauce) – 3 Tbsp
- Sesame oil – 2 Tbsp
- Black pepper – a pinch (a few twists)

Cooking Instructions
Step 1
Let’s start by making the flavorful sauce that will make this sundae stir-fry shine! In a bowl, combine Gochujang (0.5 Tbsp), minced garlic (0.5 Tbsp), Ssamjang (0.25 Tbsp), ground perilla seeds (2 Tbsp), sugar (1 Tbsp), fine Gochugaru (2 Tbsp), soy sauce (3 Tbsp), sesame oil (2 Tbsp), a pinch of black pepper, and 1 soju cup of water. Whisk everything together until well combined. You’ll know it’s ready when the sugar is dissolved and the ingredients form a smooth, cohesive sauce.
Step 2
Now, prepare your vegetables to add color and texture to the dish. Slice the onion, carrot, cabbage, and other assorted vegetables into bite-sized pieces. Thinly slice the green onion diagonally. For the perilla leaves, stack them, roll them up tightly, and then thinly slice them into ribbons. If you’re using dried glass noodles, soak them in cold water for at least 30 minutes, or boil them in hot water for about 10 minutes until tender. Drain the cooked noodles well.
Step 3
Heat 1 to 2 tablespoons of cooking oil in a pan over medium heat. Add the diagonally sliced green onions and stir-fry until they become fragrant and slightly softened, releasing their aromatic oil. This is the foundation of your delicious stir-fry!
Step 4
Once the green onions are fragrant, add all the prepared assorted vegetables to the pan. Stir-fry them over high heat for about 2-3 minutes. You want the vegetables to be tender-crisp, retaining some of their bite.
Step 5
When the vegetables are partially cooked, add the prepared glass noodles to the pan. Continue to stir-fry, making sure the noodles don’t stick to the bottom of the pan, until the noodles are cooked through and tender. Move to the next step once the noodles are nearly done.
Step 6
Turn off the heat temporarily. Add the prepared sauce directly onto the sundae pieces and mix them well. Coating the sundae in the sauce before adding it to the other ingredients helps it absorb the flavors beautifully. (It’s recommended to mix the sauce in when the pan is off the heat or on very low heat, as sundae can release liquid.)
Step 7
Once the sundae is evenly coated with the sauce, turn the heat back on to medium. Stir-fry everything together for another 2-3 minutes until the sauce thickens slightly and coats all the ingredients. Finally, top generously with the thinly sliced perilla leaves and sprinkle with sesame seeds. Your delicious Spicy and Sweet Stir-fried Sundae is ready to be enjoyed immediately!
